These Upside Down Puff Pastry Tacos are a fun twist on taco night. Flaky, crispy puff pastry is stuffed with saucy taco seasoned meat and Mexican cheese. Ingredients
Puff Pastry
1 box frozen puff pastry (2 sheets)
Taco Meat
1 pound ground hamburger
1/2 cup crushed tomatoes
1 tablespoon chili powder
1 teaspoon paprika
1 teaspoon oregano
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cumin
1/4 cup Mexican Cheese
Salt and pepper, to taste
Egg Wash
1 egg beaten
Toppings
Mexican cheese, shredded
Lettuce, finely chopped
Tomatoes, diced
Sour cream
Fresh cilantro
Instructions
1. Preheat oven to 425F. Line two baking sheets with parchment paper. Set aside.
2. Make the Taco Meat. In a large skillet add ground hamburger. Cook over medium heat until browned, breaking apart the meat as it cooks. Drain the grease from the skillet, then add in the spices and crushed tomatoes. Cook, stirring occasionally for 2-3 more minutes, to thicken the sauce. Remove from heat.
3. Cut puff pastry sheet into 6 roughly equal rectangles. Repeat with second puff pastry sheet. You will have 12 rectangles total.
4. Assemble. Evenly divide the taco meat into 12 rectangular mounds on the two prepared baking sheets. Shape the meat into a rectangle that is the size of the puff pastry rectangle. Sprinkle Mexican cheese on top of the meat, then add a puff pastry rectangle on top. You may need to stretch the puff pastry rectangle slightly to ensure it fits over the taco meat and cheese. Gently press down the puff pastry around the edges onto the parchment paper.
5. Bake. Brush the puff pastry with a beaten egg, then bake in oven for 10-12 minutes, or until golden brown.
6. Use a spatula to lift the puff pastry tacos off the parchment paper, then flip over so the meat side is facing up. Add your favorite toppings (more cheese, lettuce, tomatoes, sour cream, fresh cilantro), and enjoy!
