I love desserts, like a lot. These triple berry bars rank up there with one of my favorite desserts, especially during the summer time. What I truly like about this dessert is its simplicity. The recipe uses a crust that doubles as the crumb topping. The filling is simple too. Fresh berries are tossed together with lemon juice, zest and sugar. This creates a mixture, that once baked, gets jammy and delicious. It’s seriously so good.
Here’s what you need to know…
In this recipe, I used a variety of berries (blueberries, raspberries and blackberries). You can use all blueberries if you prefer. I like using the berries, because once baked, they get soft and jammy. The lemon juice combined with the berries allows the mixture to get more of the jammy texture.
The crumble topping is simple to make. Simply stir together the ingredients until the mixture is crumbly in texture. Make sure you reserve some crumble mixture to sprinkle over top of the bars. I like to us 3/4 of the mixture for the crust and 1/4 for the top. Press the mixture evenly into an 8×8 pan with your hand, then add the berry filling and remaining crumble mixture.
All that’s left to do is bake in the oven for roughly 40 minutes. Make sure you allow the bars to fully cool before slicing as they will be soft. That’s it! This recipe is honestly very simple to make.

Ingredients
Crust and Crumble Topping
- 3/4 cup unsalted butter, melted
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon salt
Berry Filling
- 3 cups mixed berries (blueberries, raspberries and blackberries)
- 1/4 cup granulated sugar
- Juice of half lemon
- 1 tablespoon lemon zest
Instructions
1. Preheat oven to 350F. Line an 8×8 baking pan with parchment paper and set aside.
2. In a large bowl, add all ingredients for crust and crumble topping. Mix with a fork until mixture is combine and crumbly. Add ¾ of the mixture to the prepared 8×8 pan. Using your hand, press the mixture evenly into the bottom of the pan.
3. In a large bowl, add berries, sugar, lemon juice and zest. Toss gently to combine. It’s okay if there are clumps of sugar. It will dissolve once baked.
4. Using your hands, crumble the remaining crumb topping over top of the berries.
5. Bake 350F 40 minutes, or until crumble topping is golden brown. Allow to fully cool before slicing. Enjoy!
