Tomato Peach Salad with Honey Whipped Feta

This Tomato Peach Salad with Honey Whipped Feta is bursting with summer flavors. Ripe peaches and tomatoes are served on top of a creamy sweet and tangy feta cheese. A honey herb vinaigrette is drizzled on top. Eat this as is, serve with toast, or add chicken on top of the whipped feta cheese.

The inspiration behind this dish came from our surplus of tomatoes that are in our garden. We went a little overboard at the beginning of the summer and bought way too many tomato plants. Our tomato plants are now all grown into one another and the tomatoes are turning ripe faster than we can use them. I do love tomatoes, so I’m not complaining.

This tomato peach salad is served on top of a creamy whipped feta. Essentially the feta cheese gets whipped with honey until silky smooth. It is divine. If you’ve never whipped your feta, you need to try it! Then, a honey herb dressing is drizzled on top. If you want to make this a meal, I recommend adding chicken with it. Chicken plus honey whipped feta cheese would be so good. Add in the fresh peaches and tomatoes and herb dressing and YUM! You’ve got yourself a good dinner.

Here’s what you need to know…

This dish comes together very quickly. The hardest part is whipping the feta, and it’s not really hard because the food processor does the work for you. You just need to be patient and allow the cheese to whip long enough to be smooth and creamy. Once I add the cheese to the food processor, I like to chop the cheese first, add in the honey, then grind until smooth.

You can use any tomato variety you like. I used an heirloom tomato, because they are truly my favorite tomato. Heirloom tomatoes are big and very juicy.

If you want to turn this into a meal, I recommend adding chicken. The herb vinaigrette will add flavor to the chicken and the honey whipped feta will pair really well with the chicken. You can also eat the salad as is or serve it with toast.

Ingredients

  • 1 large ripe tomato (any variety works. I used an heirloom tomato), sliced
  • 1 ripe peach, seed removed, sliced
  • 1 block feta cheese (8 ounces)
  • 1 1/2 tablespoons honey
  • Fresh basil leaves

Honey Herb Dressing

  • 3 tablespoons olive oil
  • 1/2 tablespoon fresh parsley
  • 1/2 tablespoon fresh thyme leaves
  • Salt and pepper to taste
  • 1 tablespoon honey

Instructions

1. In a food processor, add feta cheese block. Chop until cheese is broken apart. Add in honey and grind until smooth and creamy. You may need to scrape down the food processor a few times.

2. To make the dressing, add all ingredients to a bowl and whisk to combine.

3. When ready to serve, spread honey whipped feta cheese on plate. Add tomatoes and peaches on top, fresh basil leaves and drizzle with the Honey Herb Dressing. Eat as is, or serve with toast or chicken and enjoy!
