Sunday Supper

Welcome to the first edition of Sunday Supper. What is Sunday Supper? Well, my idea behind this is to provide you with a few easy meal ideas for the week, some fun updates on what I’ve been up to and new happenings for Simple Cooking with Pep. In all, I want this post to be fun, welcoming, spark conversation, and provide you with something fun to read on your Sunday. Due to time (aka my three wild little boys taking up much of my time), I will not at this time be publishing a Sunday Supper post every week, but I hope to do this at least once a month, for now.

I’ve been waiting to do this for a long time. I’ve always had the idea to share recipes with others that I created and easy meal prep ideas. Maybe it sounds weird to some, but I just get enjoyment out of it. Creating recipes, for me, is my passion. Being able to share those recipes with others and see others enjoy them just makes me over the moon excited. In my home I try to foster an environment to try new things, get out of your comfort zone, and create memories with your family. I hope to do the same with all of you. So, go ahead, try making homemade bread for the first time, or homemade bagels.

With the fall season upon us, I am hard at work cooking up and creating cozy fall recipes. Anything you want to see?

Food Network

I was recently contacted by three different people to be casted on Food Network Shows. I was honestly shocked. The fact that someone recruiting individuals for Food Network found me and wanted me to be on the show is just an honor. Now, just because these individuals contacted me doesn’t mean I would actually be on the show. I still had to apply to the show.

At this point, with my husband’s crazy job hours (right now he’s on night float, but most days he works 10-12 hour shifts + driving time to and from work), and my three little boys, it would just be too hard to be on a show that has a lengthy filming period. My boys are 4 and 2 years old and 14 months. They need their mom at this stage of their life, and unfortunately both my parents and my husband’s parents are unable to help us with watching the kids. I hope that some day I will get an opportunity to do a show that perhaps is a single day or a few day filming period. I could definitely do that!

Life and everything else

Aside from that, not much else is happening. The weather is starting to cool off, which I’m actually excited about. I do love the fall season – the beautiful colors in the leaves, the cooler, cozy weather, fires in the fireplace and all of the delicious comfort food. The fall baking season is probably my favorite. I’m a huge apple and pumpkin fan.

My family and I went apple picking last weekend. The kids loved picking the fresh apples off of the tree and eating them. You truly can’t beat the flavor of a freshly picked apple.

Meal Ideas for the week ahead

All of these meals freeze well, so they are great meal prep ideas, if you choose to make them ahead.

These Beef Stew Hand Pies are filled with all of the cozy flavors of beef stew, then tucked inside flaky, buttery puff pastry. This filling is hearty, extra saucy and packed with soft, tender vegetables, beef and fresh herbs.

This Crispy Orange Chicken and Broccoli features crispy chicken, tender broccoli, and a delicious zesty orange sauce. The sauce is packed with flavor, which is why this dish has extra sauce. Serve this over steamed rice and green onions for a delicious meal.

Taco Cups are a fun twist on tacos. Small tortillas or flaky puff pasty is baked with a layer of cheese until golden and crisp. Ground hamburger is cooked in a delicious homemade taco sauce, then filled inside crunchy, cheesy, taco cups. Add all of your favorite taco toppings, and you’ve got yourself a delicious dinner, lunch or fun appetizer.

This homemade Pumpkin Bread can be made in one bowl and is loaded with pumpkin, warm fall spices, is moist and easy to make. It has a delicious cinnamon swirl in the center of the bread that makes this pumpkin bread stand out in looks and taste.

Here’s a grocery list for each of the recipes I recommended you try this week – Beef Stew Hand Pies, Crispy Orange Chicken and Broccoli, Taco Cups and Pumpkin Bread (I always need a sweet treat during the week).


Ingredients

Units Scale

Beef Stew Hand Pies

  • olive oil (1 tablespoon)
  • 1 pound lean ground beef
  • Unsalted butter (3 tablespoons)
  • 2 carrots
  • 1 rib celery
  • 1/2 yellow onion
  • 2 cloves garlic
  • Salt and pepper
  • frozen peas (1/2 cup)
  • fresh sage (1 tablespoon)
  • fresh thyme(1 tablespoon) (or 1 teaspoon dried)
  • all purpose flour (3 tablespoons)
  • Worcestershire sauce (1 1/2 tablespoons)
  • tomato sauce (1 cup)
  • beef broth (1 cup)
  • 2 boxes puff pastry sheets (so it should be 4 sheets total)
  • 1 large egg

 

Crispy Orange Chicken and Broccoli

  • 1 1/2 pounds boneless, skinless chicken breasts, cubed
  • garlic powder (1 teaspoon)
  • Paprika (1/2 teaspoon)
  • Salt and pepper
  • Cornstarch (2 tablespoons)
  • olive oil (3 tablespoons)
  • orange juice (1 3/4 cups)
  • soy sauce (1/4 cup)
  • Honey (2 tablespoons)
  • Cornstarch (1 1/2 tablespoons)
  • 1/2 tablespoon fresh ginger (or 1/2 inch piece)
  • 1 fresh orange (for orange zest, optional)
  • 1 head broccoli
  • White rice
  • Scallion/green onion

 

Taco Cups

  • 1 pound ground hamburger
  • crushed tomatoes (1 cup)
  • water or beef broth (1/4 cup)
  • chili powder (1 tablespoon)
  • paprika (1 teaspoon)
  • oregano (1 teaspoon)
  • garlic powder (1/2 teaspoon)
  • onion powder (1/2 teaspoon)
  • cumin (1/2 teaspoon)
  • Salt and pepper
  • 12 Street Taco Style Flour tortillas (4 1/2 inch tortillas) OR frozen puff pastry
  • 1 cup Mexican cheese, shredded
  • Lettuce, finely chopped
  • Tomatoes, diced
  • Onion, thinly sliced
  • Sour cream
  • Salsa
  • Guacamole

 

Pumpkin Bread

  • vegetable oil (1/2 cup)
  • unsalted butter (4 tablespoons)
  • brown sugar (1 cup)
  • granulated sugar (3/4 cup)
  • 2 large eggs
  • 1 (15 ounce) can 100% pure pumpkin
  • ground cinnamon
  • baking powder
  • baking soda
  • salt
  • nutmeg
  • all purpose flour (2 cups)
