Strawberry Jam

With spring around the corner, I am craving all the fresh strawberries and one of my favorite recipes to make with strawberries is a fresh, homemade strawberry jam. It’s the prefect recipe to make any time of year, but especially during the warm summer months when there are lots of ripe, juicy strawberries available. With that being said, you can use frozen strawberries if that is all you have available.
I love this strawberry jam recipe, because it only needs 3 ingredients to create the most delicious jam. You can use it on toast, cakes or pastries, or even as a topping for your bowl of vanilla ice cream. I have a handful of recipes that this would work great with. I love this English Muffin Bread or my light and fluffy English Muffins for a delicious breakfast option. The jam also pairs great with this Soft Sandwich Bread or Soft Dinner Rolls recipe.

The strawberries will release some of their natural juices as they cook. Be careful in this step as sometimes the jam can splatter. It is hot!

Ingredients
- 1 1/2 pounds fresh strawberries, halved
- 3/4 cup granulated sugar
- Juice of 1 lemon
Instructions
1. Rinse off your strawberries, then cut off the stems. Cut the strawberries in halves or quarters, depending on how big the strawberries are.
2. In a medium saucepan, add strawberries, sugar and lemon juice.
3. Bring to a boil over medium-high heat and cook, stirring frequently for 15 minutes, or until the mixture is thickened.
4. Spoon the mixture into clean jars or containers with lids. Seal with the lid, then allow to cool to room temperature. Once cool, place and store in refrigerator for up to 2 weeks, or freeze for up to 3 months.

- Storage: you can store this jam in the refrigerator for up to 2 weeks, or in the freezer for up to 3 months. Just make sure to use a jar with straight sides if you store in the freezer. It makes for easier storing and allows for you to scoop the jam out easier.
