Strawberry Caprese Pasta Salad
This Strawberry Caprese Pasta Salad is a refreshing, light pasta salad, perfect for all your summer cookouts. Tender pasta is tossed together with ripe, juicy strawberries, fresh mozzarella cheese, lots of fresh herbs and a homemade balsamic vinaigrette. This pasta salad only takes a few minutes to mix together.

Pasta Salads are one of my favorite things during the summer. They’re great for summer cookouts, and honestly they make a great meal. I may have eaten this Strawberry Caprese Pasta Salad as dinner last night :).
This Strawberry Caprese Salad has quickly become one of my favorites. The ripe, juicy strawberries combined with the fresh herbs and balsamic vinaigrette is light, refreshing and perfect on a hot summer day. It may sound like an odd combination – strawberries and pasta salad, but trust me on this one, it’s really, really delicious!

- Quick and easy to make. This pasta salad comes together in roughly 20 minutes. The pasta takes approximately 10 minutes to cook, then it takes about 10 minutes to toss the ingredients together. Really, it’s that simple!

Here’s how to make this Strawberry Caprese Pasta Salad
Make the pasta
You can use any short cut pasta you prefer for this pasta salad. I used Fusilli. Boil the pasta in a large pot of salted water according to package directions. Drain the pasta once it’s cooked.
Make the dressing
The dressing comes together in just a couple minutes. In a medium size bowl, add all ingredients for the dressing, then stir to combine. Right before drizzling the dressing over the pasta salad, I like to give it one more stir.
Make the pasta salad
Now it’s time to combine all the ingredients together to make the pasta salad!
In a large bowl, add the pasta, strawberries, mozzarella cheese, red onion and fresh herbs. Drizzle the dressing over the pasta salad, then toss to combine.
Storage
Cover and store leftovers in an airtight container in the refrigerator for 3 days.

This Strawberry Caprese Pasta Salad is a refreshing, light pasta salad, perfect for all your summer cookouts. Ingredients
- 12 ounces pasta (I used Fusilli)
- 1 pound strawberries, quartered
- 16 ounces mozzarella balls, drained
- 1/4 red onion, thinly sliced
- 1 cup fresh herbs (basil and mint), roughly chopped
- Dressing
- 1/3 cup olive oil
- 3 tablespoons balsamic vinegar
- 1/4 cup honey
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
1. Bring a large pot of salted water to a boil. Boil pasta according to package directions. Drain pasta.
2. Make the dressing. In a medium bowl, add all ingredients for dressing. Whisk to combine.
3. Make the pasta salad. In a large bowl add pasta, strawberries, mozzarella, red onion and fresh herbs. Pour dressing over pasta salad. Toss to combine.
4. Serve and enjoy!
