Sticky Sheet Pan Chicken and Broccoli
This meal is a game changer. It requires very little prep work and is super easy to make. Sticky Sheet Pan Chicken and Broccoli can be made in roughly 20 minutes and it’s packed with flavor. The chicken is baked until crispy and the broccoli is roasted until tender. The sauce makes this meal so good. It’s sweet and savory and is drizzled over the chicken (there’s plenty of sauce). I like to serve this dish over rice.
It wasn’t until I became a mom that I realized why my mom made the easiest meals she could at dinner time. Life can be busy, even when you don’t have kids and only have to feed yourself or yourself and whomever you may be living with. Enter kids into the equation and you really have your hands full. I have three boys, 4 years old, 2 years old and 10 months old. The 4 year old is great. The 2 year old is getting there, but still likes to find things he shouldn’t be getting into. The 10 month old is another story. He is crawling, trying to put every crumb he finds on the floor in his mouth, trying to climb onto things, attempting to walk and really anything that could give me a heart attack, haha! I have to watch him constantly, which means cooking food can be a challenge.
Enter this sheet pan meal. I’m not sure why I haven’t made sheet pan meals sooner. They literally are the easiest meals I’ve ever made in my life and wow, they truly deliver on flavor. They require very little prep work – just chop the chicken, chop the veggies, and toss on the sheet pan. This is a meal I can easily fit in while watching my 10 month old and the best part? It only takes 12 minutes to bake in the oven.
Here’s what you need to know…
For this meal, you’ll need chicken and broccoli, olive oil, honey, soy sauce, ketchup, garlic, nutmeg and paprika. I like to serve mine over rice. I usually buy the rice that you can boil in a bag. It only takes 10 minutes to make. I like both Uncle Ben’s and Success.
Add the broccoli and chicken to the sheet pan. Season with salt, pepper and drizzle with olive oil. Add flour to the chicken and toss to combine. Bake in the oven for 10 minutes. While this bakes, I usually like to utilize my time and make the sauce as well as the rice. You’ll whisk together the soy sauce, honey, ketchup, garlic, nutmeg and paprika.
Once the chicken and broccoli are done baking, you’ll remove the broccoli from the sheet pan, then drizzle 2/3 of the sauce over the chicken. Toss to combine, then broil in the oven for 2 minutes. This helps to crisp up the chicken, and enhances the flavor. Gosh, does it make it good!
Serve the chicken and broccoli over rice and drizzle with the remaining sauce. After this, I hope I convinced you to love sheet pan meals as much as me! Seriously, though, these are the meals to make when you’re tight on time. Stay tuned for more sheet pan meals in the near future!
