Spice Cake Cookies
These Spice Cake Cookies are full of warm, fall spices, are soft and topped with a delicious vanilla glaze. The dough is easy to make and requires no mixer. The dough is a roll out dough, so you can make these cookies into different shapes if desired (leaf, Christmas tree, etc). These cookies are great for fall, but also make a great Christmas cookie recipe.

I ate a lot of spice cake growing up, like a lot. My dad’s favorite cake is spice cake, and for a short period my brother enjoyed eating carrot cake for his birthday, which to me is almost like spice cake to me (yes, I know it’s different, but I was a kid with a not so defined palate when I was eating these cakes year after year). I didn’t care for spice cake much growing up, but as I got older and my tastes did become more defined, I enjoyed it more.
The inspiration behind the cookie
The inspiration behind these cookies came in part from my dad and growing up years, but also came from a special cause for the month of September. September is Pediatric Cancer Awareness month. I was asked by Cookies for Kids’ Cancer , a non-profit that raises funds for pediatric cancer research, and FinaMill , a passionate supporter for Cookies for Kids, to create a cookie for this special month. I had the honor to work with cancer patients in a healthcare setting, and let me tell you, they are some of the toughest people I know.

What do these cookies taste like?
These spice cake cookies have a delicious blend of fall spices, making them a great fall cookie. However, the blend of spices also reminds me of a variation of a gingerbread cookie, making them a great Christmas cookie. This cookie dough is a rolled out cookie dough, which means that you can cut them into whatever shape you prefer – a leaf for fall, a Christmas tree for Christmas. The vanilla glaze on top of the cookie makes the cookies look more elegant. It also adds a delicious taste to the cookies, making them the perfect fall or Christmas cookie recipe to try.

Melt the sugar and honey
These Spice Cake Cookies are made a little bit differently than your standard cookie dough. You’ll begin by melting brown sugar with honey in a large skillet. Once the sugar dissolves, you’ll remove the dough from the heat. The best part about this dough, is you can mix it in one pan and mix it by hand without a mixer.
Remove from heat and add in remaining ingredients
Next, you’ll add in the butter and stir until melted, then whisk in the baking soda, salt, spices and egg. Stir in the flour. The dough is slightly sticky at this point. Don’t worry, the dough will come together, you just need to work with it a little. Spray some nonstick spray on your hands. Gather the dough together (it’s okay if some sticks on the bottom of the skillet. Just gather as much of it as you can). Place the dough in a lightly greased bowl and knead the dough until it comes together into a ball.
Rolling the dough
Allow the dough to rest in the refrigerator for 30 minutes. This is to help develop flavor. Next up, you’ll roll out the dough. The easiest way to roll out dough is to place the dough on a piece of parchment paper. Place another piece of parchment paper on top of the dough. Roll the dough between the two pieces of parchment paper, then cut out into your desired shapes.
Time to bake!
Bake in the oven, allow to cool a few minutes, then spread the vanilla glaze on top of the cookies. I promise, these cookies are fairly straight forward to make. They’re just made a little different than your used to.

These cookies are great for fall, but can also be the perfect cookie to hand out to your neighbors at Christmas time.
Ingredients
- 1/2 cup honey
- 1/2 cup brown sugar
- 4 tablespoons unsalted butter, cut into small pieces
- 1 large egg
- 2 3/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
Glaze
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
1. In a large skillet with high sides or large pot, add honey and brown sugar. Cook over medium heat, stirring frequently, until sugar dissolves.
2. Remove pan from the heat, then whisk in the butter until the butter melts.
3. Whisk in the baking soda, salt, spices and egg.
4. Stir in the flour. Mix until the dough is soft and slightly sticky. Spray your hands with nonstick cooking spray, and gather the dough into a ball. Allow to rest for 30 minutes in refrigerator.
5. Preheat oven to 350F.
6. Place ½ the dough on a piece of parchment paper. Place a piece of parchment paper on top of the dough. Roll the dough to ¼ inch thickness. Using cookie cutter of your choice, cut out cookies. Space the cookies out on a parchment paper lined baking sheet. Repeat with remaining dough and re-roll the scraps of dough.
7. Bake in oven for 12 minutes. Allow to cool a few minutes on the baking sheet, then transfer to a wire cooling rack.
8. Make the glaze. In a medium bowl, whisk together all ingredients for glaze. Spread glaze over warm cookies and enjoy!
