Soft Apple Fritter Bread

This easy Apple Fritter Bread is soft, fluffy and super moist. It’s loaded with cinnamon sugar apples, and has a delicious cinnamon sugar swirl throughout the loaf. This quick bread will fill your house with the warm smells of fall as it bakes. You may want to make two, because one loaf doesn’t last long!

This quick bread will fill your house with the warm smells of fall as it bakes. You may want to make two, because one loaf doesn’t last long!

Ingredients

Units Scale

Apple Layer

  • 2 large apples, peeled and chopped
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon

Cinnamon Sugar layer

  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 4 teaspoons ground cinnamon

Apple Fritter Loaf

  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1/4 cup milk
  • 1/3 cup sour cream
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Glaze

  • 1/2 cup confectioners sugar
  • 1 tablespoon whole milk or heavy cream

Instructions

1. Preheat oven to 350F. Line a 9×5 inch loaf pan with two sheets of parchment paper (the extra parchment paper will help to keep the edges of the loaf from getting too dark). Spray the pan/parchment paper with nonstick spray.

2. Make the apple layer. In a large bowl, add chopped apples 2 tablespoons brown sugar and 1 teaspoon ground cinnamon. Toss to combine. Set aside.

3. Make the Cinnamon Sugar Layer. In a medium bowl, stir together ingredients for the cinnamon sugar layer. Set aside.

4. Make the Apple Fritter Loaf. In a large bowl, whisk together the sugar, butter, eggs, vanilla, milk and sour cream until well combined. Add in the flour, baking powder and salt. Whisk just until combined.

5. Pour half of the batter into the prepared pan. Sprinkle ¾ of the apple mixture over the batter, then sprinkle ½ the cinnamon sugar mixture over the apples. Use a butter knife swirl the batter 2 times. Pour the remaining batter on top, then add the remaining apples, and sprinkle the remaining cinnamon sugar mixture over apples. Use the butter knife to swirl the batter 2-3 times more.

6. Place a piece of aluminum foil around the sides of the pan (this also helps to keep the edges of the bread from getting too dark). At the 35 minute mark, place a piece of aluminum foil loosely over the top of the bread so the top doesn’t get too dark. Bake in preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to fully cool in the pan.

7. In a small bowl, whisk together ingredients for glaze. Drizzle over apple fritter bread, then serve.
