Snickerdoodle Cake
Today I partnered with Lifeway Kefir to bring you this delicious, ultra soft Snickerdoodle Cake. The vanilla cake has a ribbon of cinnamon sugar through the center, and is topped with a fluffy frosting that gets a delicious creaminess from Lifeway Kefir. The cake is topped with a sprinkle of cinnamon sugar for the final touch.
I love eating cake for dessert, okay sometimes for breakfast too :). One of my favorite tricks for getting a cake to be ultra soft is adding Lifeway Kefir to it. Plus, Lifeway Kefir is packed with probiotics, high in protein and calcium, so it adds a hint of nutrition to the cake.
I’ve also found adding Lifeway Kefir to frosting adds a delicious creaminess and tartness, almost like a cream cheese frosting. This cake features Lifeway Kefir in both the cake and the frosting. If you like Snickerdoodle Cookies, I guarantee you will love this cake.

Measure your ingredients
The beauty of this Snickerdoodle cake is that it can be made without a mixer, in one bowl. Before I even begin mixing the cake, I like to get all my ingredients measured and ready to use. It just seems to make the process run smoother. Plus, what if you forgot that you used the last of your brown sugar the other day? This hasn’t happened to me recently…just kidding! I actually was making cinnamon rolls and had my dough rolled out and ready for the brown sugar cinnamon mixture when I realized I was out. I had to wake my son up from his nap and go to the store. Thankfully he had already napped the majority of his average nap time. But, yes, I learned my lesson from that one!
Preheat the oven and get your pan ready
The first thing you’ll want to do before even mixing the snickerdoodle cake is preheat the oven. This cake can be made fairly quickly, so the last thing you want is to wait around for the oven to preheat. Preheat the oven to 350F.
You’ll also want to make sure you get your pan ready so that once the batter is mixed, you can add it directly to the pan. Line an 8×8 pan with parchment paper, lightly spray with nonstick cooking spray and set aside. Now it’s time to begin!
Mixing the batter
This cake is straight forward. You’ll whisk together the wet ingredients together until combined, then add in the dry ingredients. Use a wooden spoon to fold in the dry ingredients until combined.
Divide the batter
Add half the batter to the prepared 8×8 pan. There isn’t a ton of batter, but I promise, when it bakes in the oven it expands!
Sprinkle the cinnamon sugar mixture on top of the cake, then using a cookie scoop, scoop the remaining batter evenly over the cinnamon sugar mixture. Use a rubber spatula to gently and evenly spread the batter over the cake. If you don’t use a cookie scoop, the batter can be tough to spread over the cake. Hence why I recommend using one.

Now, it’s time to bake the cake. Bake the cake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to fully cool before frosting the cake.
frost the cake and enjoy
Once the cake is cool, add the frosting on top of the cake and spread over the cake in an even layer. Sprinkle with a cinnamon sugar mixture, if desired. Serve and enjoy!

Ingredients
- 1/2 cup vegetable oil
- 1/2 cup Lifeway Kefir whole milk
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 3/4 cups all purpose flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Cinnamon Sugar Swirl
- 1/4 cup brown sugar
- 2 teaspoons ground cinnamon
Vanilla Frosting
- 2 sticks unsalted butter (1 cup), softened
- 3 1/2 cups powdered sugar
- 1 1/2 teaspoons vanilla extract
- 1/4 cup Lifeway Kefir whole milk
Cinnamon sugar, for topping
Instructions
1.Preheat oven to 350F. Line an 8×8 baking pan with parchment paper. Lightly spray with nonstick cooking spray.
2. In a large bowl, add oil, @lifewaykefir whole milk, sugars, eggs and vanilla. Stir with a whisk to combine. Add flour, baking powder, baking soda and salt. Stir just until combined.
3. Stir together ingredients for cinnamon sugar swirl.
4. Pour half the cake batter into prepared pan. Sprinkle cinnamon sugar swirl evenly over cake. Using a 2-3 tablespoon cookie scoop, evenly scoop the remaining cake batter on top of the cinnamon sugar swirl. Use a rubber spatula to evenly spread batter over cinnamon sugar swirl.
5. Bake cake in preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow cake to fully cool.
6. Beat butter in a stand mixer fitted with the paddle attachment or a large mixing bowl. Beat butter until light and fluffy. Slowly add in powdered sugar, vanilla and @lifewaykefir whole milk. Beat until frosting is light and fluffy.
7. Spread frosting over cooled cake. Sprinkle cinnamon sugar on top of frosting.
