Ingredients

Cobbler

  • 6 tablespoons unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 2/3 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground gloves
  • 1/4 teaspoon ground ginger

Topping

  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup chopped pecans
  • 1 1/2 cups hot water

Instructions

1. Preheat oven to 350F. Lightly spray a 9×9 baking dish with nonstick cooking spray.

2. Make the Cobbler. In a large bowl, stir together the butter, sugars, pumpkin, vanilla extract and milk until combined. Add in the remaining ingredients, and whisk just until combined. Pour batter into prepared baking dish.

3. Make the Topping. In a medium bowl, stir together the sugars, cinnamon and pecans. Sprinkle over the cobbler batter.

4. Pour the hot water evenly over the cobbler (this is what creates the gooey caramel sauce at the bottom of the cobbler). Bake in the oven for 35-40 minutes, or until a toothpick inserted into the cake comes out clean.

5. Top with a scoop of ice cream, serve and enjoy!
