Description

This Pumpkin Coffee Cake is soft, moist and full of fall flavors, thanks to the pumpkin and homemade blend of pumpkin pie spices. The cake is piled high with a delicious cinnamon sugar crumb topping then drizzled with a vanilla icing. This is the perfect breakfast treat for your fall weekends.


Ingredients

Crumb Topping

  • 3/4 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 6 tablespoons salted butter, softened

Cake

  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 cup pumpkin puree
  • 1/4 cup sour cream
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground allspice

Icing

  • 1/2 cup powdered sugar
  • 1 tablespoon milk or heavy cream

Instructions

1. Preheat oven to 350F. Line an 8×8 baking pan with parchment paper.

2. In a medium sized bowl, add ingredients for crumb topping. Use a fork to claw/mix ingredients together until pea sized clumps remain. Set aside.

3. In a large mixing bowl, add sugars, oil, pumpkin and sour cream. Whisk to combine, then add flour, salt baking powder and spices. Whisk just until mixture is combined.

4. Pour batter into prepared pan. Evenly smooth the batter in the pan. Sprinkle crumble topping over top of the batter. Bake in preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

5. Allow to fully cool in pan.

6. When ready to serve, whisk together ingredients for icing, then drizzle over the coffee cake. Serve and enjoy!
