Pulled Pork Taco Cups
These Pulled Pork (or chicken) Taco Cups are a fun, easy meal. Buttery, flaky biscuits are baked with cheese and pulled pork until golden brown. The pulled pork is cooked in a flavorful, homemade sauce in the slow cooker or instant pot. The taco cups are topped with a sweet and tangy apple slaw and barbecue sauce, making a tasty dinner, lunch or appetizer.

I always love a fun twist on meals. These taco cups are a spin on the traditional pull pork tacos. You can make instant pot pulled pork or make crock pot pulled pork, which means the meal is basically hands free, with very little prep work. Certainly if you aren’t a fan of pulled pork, you could substitute pulled chicken. Either way, these taco cups are a delicious, easy meal.

Making the Pulled Pork
This pulled pork recipe can be made in either the instant pot or crock pot. If you choose to make it in the crock pot, you can add all of the ingredients to the crock pot the night before and place it in the refrigerator. The next day, you can plug it in and let the crock pot do the work. It’s great for work days or when you just have a busy day ahead of you.
If you choose to make the pulled pork in the instant pot, the results will be similar to the crock pot, just faster. You can cook the meat in under 2 hours in the instant pot and have a delicious, tender meat.
With either method, you can start with a frozen piece of meat. So, if you forget to take the meat out of the freezer, but want to make these the same day, don’t worry! You can!
Making the Taco Cups
To make these taco cups, I used store bought biscuit dough. Certainly you can make your own if you desire. the biscuit dough is placed in a greased muffin tin. Next, you’ll add gouda cheese and the cooked, shredded pulled pork.
The reason you add the already cooked pulled pork to the raw biscuit dough is because the pork maintains the center well. If you bake the biscuit without the pork in it, the biscuit dough puffs up, and it’s impossible to stuff the pork inside of it. Plus, it gives the pork an extra caramelized flavor that is seriously delicious!
The Final Touches
You can add whatever toppings you want to these taco cups. I added a sweet and tangy apple slaw and barbecue sauce. The fun of these is that they are so versatile.

The taco cups are topped with a sweet and tangy apple slaw and barbecue sauce, making a tasty dinner, lunch or appetizer.
Ingredients
Pork
- 2–3 pound pork loin
- 1 (30 ounce) can crushed tomato
- 2 cups chicken stock
- 1/4 cup brown sugar
- 2 teaspoons garlic powder
- 1 tablespoon chili powder
- 2 teaspoons cumin
- 2 teaspoons oregano
- 1/2 teaspoon paprika
- Salt and pepper
Taco Cups
- 2 packs Pillsbury Grands Biscuits
- Gouda Cheese, shredded
- Barbecue Sauce, to serve
Apple Slaw
- 2 cups coleslaw mix
- 1/4 cup finely sliced apple
- 1/4 cup mayonnaise (or Greek yogurt)
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- Salt and pepper
Instructions
1. Add all ingredients for the Pork to crockpot or instant pot. Stir to combine spices and sauce.
CROCKPOT: Cook on low for 8 hours.
INSTANT POT: Frozen: Cook for 60 minutes in instant pot with 15 minutes of natural release. If not frozen, cook for 45 minutes with 15 minutes of natural release.
2. Carefully remove meat and place on large plate. Allow to cool a few minutes, then shred with two forks. Add some of the broth from the slow cooker or instant pot to the pork and stir to combine. This will help the pork stay moist.
3. Preheat oven to 350F.
4. Lightly spray a muffin tin with nonstick cooking spray. Flatten the biscuits and gently stretch the dough to make the biscuits a little larger. Place the biscuit dough inside the well of a muffin tin. Add shredded gouda cheese and pulled pork.
5. Bake in oven for 18-20 minutes, or until biscuits are golden brown.
6. Make the apple slaw. In a medium bowl, add all ingredients for slaw. Toss to combine. Add slaw on top of taco cups as well as barbecue sauce, if desired. Enjoy!
