Peach Cobbler Cookies

These Peach Cobbler Cookies take roughly 20 minutes to make. No chilling of the dough, just mix and bake! These soft cookies feature fresh peaches and a delicious buttery cinnamon streusel that is baked on top of the cookies. It truly doesn’t get any better than these cookies!

The past week or so the weather has cooled and the nights are starting to get a hint of crispness in the air. I can tell that fall is right around the corner, and while my recipe testing right now has completely converted to the cozy, fall recipes, I couldn’t help but want to slip in this one last summer recipes. It’s late August, which means that peaches are in their prime to eat and use in recipes, at least where I live. We just went peach picking last weekend and these cookies were the first thing I made with the peaches.

If you know me, you know I very seldom chill my cookie dough. Why? Honestly because I am impatient, haha! But secondly, because my wild crew of 4 little children keeps me very, very busy, and it’s difficult to find time to cook dinner, let alone bake right now.

These peach cobbler cookies do not require any dough chilling, because they have a hint more flour to make for a sturdier cookie. The cookies have a delicious chewy texture, take roughly 20 minutes to make and are filled with fresh, juicy peaches. What’s better than that for an end of summer treat!? Alright, let’s get to baking these, shall we?

The details

make the streusel

I like to make the streusel topping for the cookies first. That way, once the cookie dough is made I can just scoop the cookie dough onto my prepared baking sheet, top with the streusel and bake.

The streusel comes together easily. Simply add all the ingredients to a medium sized bowl, then use a fork to sort of claw the ingredients together. Once you have pea sized morsels, the streusel is done and ready to use. Set the streusel aside while you make the peach cobbler cookies.

These peach cobbler cookies have a delicious chewy texture thanks to the melted butter. The melted butter is not only easier to mix into the cookie dough by hand, but it also works differently than softened butter in cookie dough. The melted butter coats the flour more evenly resulting in chewier, denser cookies.

If you want to use a stand mixer or handheld mixer for these cookies, you certainly can, but it is not needed. All you need is a whisk and a large mixing bowl. You’ll add the melted butter, sugars, vanilla extract and egg to your bowl, then whisk together to combine. Next, you’ll add in the dry ingredients. Use your whisk to mix together, just until combined. The whisk acts to “sift” the flour, so I usually don’t bother with sifting the flour before mixing it in. Certainly you can if you want. But I have not found a difference in the cookies when sifting the flour. Next you’ll fold in the peaches into the cookie dough with a wooden spoon.

Scoop 8 large mounds of cookie dough onto your parchment paper lined baking sheet, then top the cookies with the streusel topping. These cookies take 12-14 minutes to bake. Once the cookies are baked, you’ll allow to cool 5 minutes on the cookie sheet before transferring to a wire cooling rack.

Once the cookies are cool, drizzle the cookies with vanilla icing. Now all that’s left to do is enjoy!

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar (52 grams)
  • 1/2 cup brown sugar (104 grams)
  • 1 large egg
  • 1 teaspoon vanilla extract (4 grams)
  • 1 2/3 cups all purpose flour (208 grams)
  • 1/2 teaspoon baking powder (2 grams)
  • 1/2 teaspoon baking soda (2 grams)
  • 1/2 teaspoon salt (3 grams)
  • 1 cup peaches, peeled and chopped

Streusel

  • 3 tablespoons granulated sugar (45 grams)
  • 2 tablespoons butter (28 grams)
  • 1/4 cup flour (52 grams)
  • 2 teaspoons cinnamon (21 grams)

Icing

  • 1/2 cup powdered sugar (65 grams)
  • 1 tablespoons whole milk or heavy cream (15 grams)

Instructions

1. Preheat oven to 350F. Line a baking sheet with parchment paper.

2. Make the streusel. In a medium bowl, combine all ingredients for streusel topping. Use a fork to claw/mix ingredients together until pea-sized clumps remain.

3. Make the cookies. In a large bowl, add butter, sugars, vanilla and egg. Whisk to combine. Add in flour, baking powder and baking soda and salt. Mix just until combined. Fold in the peaches.

4. Scoop 8 large mounds of cookie dough onto prepared baking sheet. Top with streusel topping.

5. Bake in preheated oven for 12-14 minutes, or until edges are golden brown and cookie is set. These cookies are softer because of the peaches so take a bit longer to bake. Allow to cool 5 minutes on baking sheet before transferring to a wire cooling rack.

6. In a small bowl, whisk together powdered sugar and milk. Drizzle over cookies. Serve and enjoy!
