Peach Cobbler Bars
These Peach Cobbler Bars are made with a rich, buttery crust that serves as both the crust and the crumble topping. The bars are filled with juicy peaches, then drizzled with a delicious vanilla icing. These bars are the perfect easy, summer dessert.
Is there anything better than sinking your teeth into a dessert filled with juicy, ripe peaches? Crumble bars are one of my favorite desserts to make, because they can be made so easily and effortlessly. Yet, they taste like you’ve spent lots of time on making them.
These Peach Cobbler Bars are made with a buttery crust that doubles as the crumble topping. The peaches are tossed in a cinnamon sugar, which creates a delicious syrupy juice when baked. There’s nothing that screams summer more than these bars.
If there is one fruit I love about summer, it’s peaches. When they are ripe and extra juicy, oh my word. They are just so good. I love adding fresh peaches on top of vanilla ice cream. If there is one dessert to make with peaches, this is the one to make. I love that this treat is handheld, so you can grab one on the go (ahem, that’s me all the time right now chasing after my four little ones). You can also make these even more indulgent by adding a scoop of vanilla ice cream on top. Of course, then it won’t be a handheld treat, but it’s delicious!
The details
The best part about these Peach Cobbler Bars is that the crust and the topping use the same recipe. I also love that the peaches don’t need any prior cooking time and are just simply tossed in a cinnamon sugar mixture, then sprinkled on top of the crust prior to baking.
Ingredients
- Crust and Cobbler Topping
- butter, melted – the butter adds delicious flavor to the crust and cobbler topping
- brown sugar – I love using a mix of brown and granulated sugar. They both add different flavors and have different texture results when baking. Brown sugar tends to leave the crust and cobbler a bit softer, while the granulated sugar helps baked goods get more crisp. The blend of both in these peach cobbler bars allows for the best of both.
- granulated sugar
- all-purpose flour – this helps hold the mixture together
- ground cinnamon – the cinnamon adds great flavor to the crust and cobbler topping
- salt – salt helps to enhance the flavors
- Peach Filling
- peaches, diced – make sure you pick fresh, ripe peaches
- brown sugar – Just like in the crust and cobbler topping, I love using the mixture of both sugars in the peach filling. It truly allows for the best of both in the filling.
- granulated sugar
- cinnamon – I love the flavor the cinnamon adds to the filling. It’s not overpowering, but it’s enough to add the flavors you know and love about peach cobbler.
- Vanilla Icing
- powdered sugar – powdered sugar is the perfect choice for the icing. It helps create a smooth, perfectly sweet icing.
- milk – milk thins the icing enough to make it pourable.
- vanilla extract – vanilla extract enhances the flavors in the icing.
Make the crust and Cobbler topping
I love recipes that take only minutes to make. These bars are just that. The crust and crumble topping use the same mixture, which takes only a few minutes to mix together. Butter, sugars, flour, cinnamon and salt are mixed together until combined.
Roughly 3/4 of the mixture is dumped into an 8×8 pan lined with parchment paper. I like to line my pan with parchment paper, because it makes it super easy to lift the bars out when baked. This way, you don’t have to worry about any bars getting stuck to your pan!
Press the mixture flat in the bottom of the pan, then reserve the rest for the cobbler topping.

For these peach cobbler bars, the peaches do not need any cooking prior to adding on top of the crust. Simply toss the peaches in a cinnamon sugar, then add on top of the crust. The cinnamon sugar helps the peaches to release their natural juices, which makes an absolutely delicious syrupy, juicy peach mixture once the bars are baked.

Remember the cobbler topping from step one? Now it’s time to use it. Sprinkle the remaining crumble over top of the peaches, then bake. The bars take 40 minutes to bake. Once the bars are baked, allow to fully cool before slicing.
I like to drizzle my bars with a vanilla icing, but they’re just as delicious plain.

Ingredients
Crust and Cobbler Topping
- 3/4 cup unsalted butter, melted
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 1/4 cups all-purpose flour
- 3/4 teaspoons ground cinnamon
- 1/2 teaspoon salt
Peach Filling
- 3 cups peaches, diced
- 1/4 cup brown sugar
- 2 tablespoons granulated sugar
- 1/2 teaspoon cinnamon
Vanilla Icing
- 1 cup powdered sugar
- 1–2 tablespoons milk
- 1/4 teaspoon vanilla extract
Instructions
1. Preheat oven to 350F. Line an 8×8 baking pan with parchment paper and set aside.
2. In a large bowl, add all ingredients for crust and cobbler topping. Mix with a fork until mixture is combine and crumbly. Add ¾ of the mixture to the prepared 8×8 pan. Using your hand, press the mixture evenly into the bottom of the pan.
3. In a large bowl, add peaches, and sugar. Toss gently to combine. It’s okay if there are clumps of sugar. It will dissolve once baked. Add peaches over top of crust.
4. Using your hands, crumble the remaining cobbler topping over top of the peaches.
5. Bake in preheated oven for 40 minutes, or until crumble topping is golden brown. Allow to fully cool before slicing.
6. In a small bowl, whisk together ingredients for vanilla icing. Drizzle over bars. Serve and enjoy!
