Oatmeal Raisin Cookies

Ingredients
- 1/2 cup unsalted butter
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 3/4 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3/4 cup all-purpose flour
- 1 1/2 cup old-fashioned whole rolled oats
- 1 cup raisins
Icing
- 1/4 cup powdered sugar
- 1/2 – 3/4 tablespoon milk
Instructions
1. Preheat oven to 350F. Line two baking sheets with parchment paper.
2. In a small saucepan, add butter. Cook over medium heat until the butter begins to brown, stirring occasionally. Remove as soon as the butter turns an golden brown color. Pour into a bowl to prevent butter from getting darker. Allow to cool for 5 minutes.
3. In a large bowl, add sugars, browned butter, vanilla and egg. Whisk to combine, then add baking soda, cinnamon, salt, flour and oats. Stir just until combined. Fold in the raisins.
4. Scoop 7 large cookie dough mounds onto prepared baking sheets. Bake in preheated oven for 10-12 minutes, or until edges are lightly golden brown. Allow to cool 5 minutes on baking sheet before transferring to wire cooling rack.
5. Make Icing. In a small bowl, whisk powdered sugar and milk. Drizzle over cookies. Enjoy!
Notes
How to brown butter. Browning butter is very easy and takes only a few minutes. You’ll begin by melting the butter in a saucepan over medium heat. It’s important to stir the butter, to keep it moving and ensure even melting. Once the butter melts, it will begin to foam and sizzle. Stir the butter frequently during this time. In roughly 5 minutes, the butter will begin to turn a golden brown color and the foam will reduce. You will also really be able to smell the nutty and buttery aroma from the brown butter. Remove the pan from the stove and pour into a bowl to stop the butter from getting any darker.
If you want your raisins to be extra plump, you can soak them for 10 minutes in warm water before using. This step is optional.
