Now, imagine sinking your teeth pinto one that is stuffed with melty mozzarella cheese and topped with a delicious herb salt mixture. Soft pretzels are one of my favorite bread snacks to munch on. The soft, chewy dough combined with the salty topping is just irresistible.

These Mozzarella Stuffed Soft Pretzels are delicious and only require one short 25 minute rise time before shaping and baking. This recipe is easy, and dare I say foolproof. Seriously anyone can make these pretzels!

This mozzarella stuffed soft pretzel recipe uses instant yeast, which means you do not have to mix the yeast with warm water and allow it to sit for 5 minutes. You can simply add the yeast in directly with the other ingredients.
Add all dough ingredients to the bowl of your stand mixer, then mix on low speed to combine the ingredients. Once combined, increase speed to medium and knead for 4 additional minutes. You can knead this dough by hand. I would recommend kneading for 8 minutes by hand.

This mozzarella stuffed soft pretzel dough only requires one 25 minute rise time. Place your dough in a greased bowl. Spray the top of the dough with nonstick spray, then cover with plastic wrap. Place the covered dough in a warm place and allow to rise for 25 minutes.
I like to turn my oven on and allow the oven temperature to reach 100F. Once the oven temperature reaches 100F, I turn the oven off and place the covered dough in the warm oven. This gives the dough a warm place to rise. Howerver, during the summer months, I find I don’t need to do this as often, as the warm temperature outside helps the dough to rise. I usually place the covered dough covered on a table outside (in our sunroom) and allow the dough to rise in the warm, humid air.

Once the dough is done rising, turn the dough out onto a lightly floured surface. Roll out the dough into an 18-20 inch long rope, then flatten the rope.
Cut a mozzarella cheese stick up into 4-5 thinner slices. Place these thinner slices of cheese along the center of the flattened rope. Pinch the dough around the cheese up and over the cheese, to seal.
Shape the mozzarella stuffed soft pretzel dough into a pretzel shape. Form a circle with the dough, by bringing the two ends together at the top of the circle. Twist the two ends together, then bring these ends down toward yourself to form a pretzel shape.
Place the pretzels on a parchment paper lined baking sheet as you repeat the process with the remaining dough.

Bring water to a boil, then sprinkle in the baking soda. The baking soda bath gives the pretzels their characteristic chewy texture.
Drop the pretzels in the water 1-2 at a time for 20 seconds, then remove with a slotted spoon/spatula. Place the pretzles on the parchment paper lined baking sheet.

Brush the pretzels with a beaten egg (this helps give the pretzels the golden brown, shiny color), then sprinkle with herb salt mixture.
Bake in oven for 12-15 minutes or until golden brown in color. Now all that’s left to do is enjoy!

Ingredients
Dough
- 1 packet (2 1/4 teaspoons) instant yeast (1/4 ounce)
- 1 cup warm water (236 mL)
- 3/4 tablespoon honey or 1 1/2 tablespoon granulated sugar
- 3 1/4 cups bread flour (406 grams)
- 2 tablespoons unsalted butter, softened (1 ounce)
- 1 teaspoon salt (6 grams)
Cheese Stuffing
- 8 mozzarella cheese sticks
Baking Soda Bath
- 1/2 cup baking soda (120 grams)
- 10 cups water
Egg Wash
- 1 egg, beaten
Topping
- 2 tablespooins pretzel or sea salt
- 1 tablespoon fresh herbs (rosemary, thyme, oregano), chopped
Instructions
1. In the bowl of a stand mixer, fitted with the dough hook attachment, add all ingredients for dough. Mix on low speed until ingredients are combined then turn up to medium speed and knead for 4 minutes.
2. Transfer dough to lightly greased bowl. Spray the top of the dough with nonstick spray, then cover with plastic wrap.
3. Allow the dough to rise in a warm place for 25 minutes. You may turn your oven on and allow the temperature to reach 100F. Once it reaches 100F, turn the oven off. Place the covered dough in the warm oven.
4. Turn dough out onto lightly floured surface. Divide into 8 roughly equal pieces.
5. Working with one piece at a time, while keeping the rest of the dough covered, roll into a 18-20 inch long rope. Flatten the rope. Divide the mozzarella cheesestick into 4-5 thinner strips, then place the mozzarella cheese strips on the center of the flattened dough. Pinch the dough around the mozzarella cheese to seal the cheese into the dough.
6. Shape the rope into a pretzel shape.
7. Place the pretzel on a parchment paper lined baking sheet. Cover, while you repeat the process with the remaining dough.
8. Preheat oven to 400F.
9. Make the baking soda bath. Add water to a large pot. Bring the water to a boil, then turn off the heat. Sprinkle in the baking soda. The mixture will bubble.
10. Add the pretzels 1-2 at a time for 20 seconds in the water. Remove from the water with a slotted spoon or spatula and allow excess water to drip off of pretzel. Place pretzel on parchment paper lined baking sheet.
11. Brush the pretzels with beaten egg, then sprinkle salt and fresh herbs over pretzel.
12. Bake in preheated oven for 12-15 minutes, or until golden brown in color.
