Monday Baking

First and foremost I want to take a moment to honor and mourn all of the fallen U.S. troops.
Okay, today isn’t Sunday, but since I shared a new recipe yesterday and today is a holiday, I figured I would delay my Sunday Baking post until today. I’m actually debating about switching this to be a Monday Baking post. What are your thoughts? That way I can share a new recipe for you to try for your actual Sunday Baking. Then, on Monday, you’ll get some baking ideas for the week from the suggested recipes I provide in here. Anyways, just a thought.
Yesterday, I shared these Berries and Cream Buns, and gosh they are so good! The buns are ultra soft and are stuffed with a homemade raspberry jam and homemade whipped cream. You can certainly use any fruit you’d like -strawberries or blueberries to make a jam, or if you’re short on time, you can use store bought. I will say that homemade jam is surprisingly easy to make. I shared a recipe yesterday that takes less than 10 minutes to make.
Making Bread is one of my favorite things to do. There’s just something therapeutic about it. With that being said, I also don’t have all day to wait for bread to rise, hence my creation for bread recipes with short rising times. I’ve found that a warm oven can do wonders, and adjusting the temperature to be a bit warmer can make the rising time even faster. Of course there is a limit as to how warm you have your oven. You don’t want to actually bake the bread! 🙂 The highest temperature I typically use for a warm oven is 200 degrees Fahrenheit.
This week brought in some warm weather, plus a few thunderstorms. In fact, as I type this, there are some dark clouds rolling in. I think we’re about to get a thunderstorm now! I love summer thunderstorms. Speaking of summer, I know it’s a couple weeks away, but I feel like Memorial Day marks the start of summer and I am ready for all the summer recipes. Warm weather is usually starting to come in around this time, and outdoor pools open for the season.
In terms of recipes for the week, I’ve been focusing a lot on summer fruits. I think it’s because my pregnancy hormones are making me crave ALLLL the fruits :). So be prepared for a lot of bakes featuring fresh fruits. Now, keep in mind, it’s not just pieces of fruit being thrown into baked goods. Sometimes I turn the fruit into a jam, or use it as a garnish. One of my favorites I made that I will be sharing soon are blueberry muffins stuffed with a fluffy cream cheese filling. Those were good! We had those for our breakfast this past week. Blueberries are probably my favorite fruit to add to baked goods. Well, at least during the spring and summer. During the fall, I’m all about the apples!
What kind of summer recipes do you want to see me bake? I’m thinking of making a Peach Crumble Cheesecake, similar to my Blueberry Crumble Cheesecake. What do you think about that? I was also thinking of sharing some more no bake desserts, like my No Bake Peanut Butter Pie I just shared recently. I love no bake desserts during the warmer weather. Anything else you’d like to see?
