Loaded Potato Soup
This Loaded Potato Soup is THE soup I will be eating on repeat this cozy season. A creamy broth is loaded with fork tender potatoes, crispy bacon and extra cheddar cheese, then seasoned with fresh herbs. It can be made in one pot and comes together in just 30 minutes.

Soup season is finally here! Although for some soup season may be a year round thing. I honestly could eat soup year round, but generally during the warmer months I don’t eat soup often. There’s something about the cozy soup season that truly warms the soul.
Growing up whenever my mom would make any dish that involved potatoes, she would wash and peel the potatoes, then give my brother and I a piece of the potato to enjoy. Have you ever eaten raw potato? My husband thinks I’m weird, but I absolutely LOVE raw potatoes and truly any form of potato. What’s not to love about potatoes?
This loaded potato soup is definitely one of my favorite soups. It’s creamy, cheesy and with the addition of the salty bacon it takes this soup up a notch. I love that this soup comes together so easily and quickly too, which makes it a great weeknight meal. If you’re looking for a soup to make, this is one you’ve got to try!

Ingredients
- bacon – you can use the bacon grease to help make this soup. It truly adds depth of flavor to the soup if you use the bacon grease. The crispy, salty bacon is the perfect topping for this soup.
- all-purpose flour – the flour helps thicken this soup.
- whole milk – milk, along with the heavy cream and chicken broth create this rich, creamy broth. It’s the perfect blend of richness, creaminess and savory notes.

- potatoes – what’s the potato soup without the potatoes!? The potatoes get fork tender and soak up all the delicious flavor when cooked in this creamy broth.
- cream cheese – cream cheese adds a bit of tang to the soup and creaminess
- sour cream – if you imagine eating a loaded baked potato with sour cream, you can imagine just how good the sour cream makes this soup.
- garlic powder – I like using garlic powder in this soup because the powder more evenly disperses the flavor in the broth. Certainly you can use fresh garlic instead.
- onion powder – I like using onion powder in this soup because the powder more evenly disperses the flavor in the broth. Certainly you can use fresh chopped onion instead.
- fresh sage, chopped – sage, rosemary and thyme are a great blend of spices that go with just about everything. These herbs add the perfect amount of flavor to this soup.
- dried rosemary
- dried thyme
- Salt and pepper, to taste
- cheddar cheese – cheese and potatoes just go together. The cheddar cheese melts into the creamy broth and just adds delicious flavor to the soup.
Here’s how to make it
This loaded potato soup is loaded with flavor from the salty bacon, herbs, creamy broth, herbs and cheddar cheese.
You’ll begin making this loaded potato soup by frying the bacon in your large soup pot. By doing this, you will get extra flavor in the soup from the bacon grease. Certainly, you can make the bacon in a separate pan, if desired, but that extra depth of flavor from the bacon grease is truly good.
Next, you’ll add flour to the bacon grease and whisk until a paste forms. This will help to thicken the soup. Slowly pour in the milk, cream and broth, while whisking constantly. Cook until slightly thickened, then add in the potatoes.
This next step is where the potatoes will get tender. Boil the loaded potato soup for roughly 10 minutes or until the potatoes are tender.
Finally, you’ll add in the sour cream, cheddar cheese, cream cheese, garlic and onion powder and herbs. Season the soup with salt and pepper to your desired taste preference.
This soup comes together in roughly 30 minutes, so it’s a great soup to make as a weeknight meal.

Ingredients
- 1/2 pound bacon
- 1/2 cup all-purpose flour
- 3 cups whole milk
- 2 1/2 cups heavy cream
- 4 1/2 cups chicken broth
- 4 pounds potatoes, peeled and diced
- 6 ounces cream cheese, room temperature
- 1 cup sour cream
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 tablespoon fresh sage, chopped
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 2 cups cheddar cheese
Instructions
1. In a large pot, fry bacon until crispy. Remove bacon from pot and place on paper towels to drain excess grease.
2. Add flour to bacon grease (or if you wish to drain the bacon grease, drain the bacon grease and use 6 tablespoons unsalted butter in place of the bacon grease. Melt the butter in the pot. ) and whisk over medium heat until a paste forms. Cook for 1 minute.
3. Slowly pour in milk, heavy cream and broth, whisking while you pour in the liquids. Cook, stirring frequently until slightly thickened.
4. Add in potatoes and bring to a boil. Cook until potatoes are fork tender, about 10 minutes.
5. Add in sour cream, cream cheese, garlic and onion powder, salt and pepper, sage, rosemary, thyme and cheddar cheese. Allow soup to simmer 5-10 minutes, to heat everything through and melt the cheese. Stir frequently so potatoes don’t stick to bottom of pot.
6. Serve with extra cheddar cheese and cooked bacon. Enjoy!
