Lemon Parmesan Salad

Ingredients
Lemon Vinaigrette
- Juice of 2 lemons
- Zest of 1 lemon
- 1 small garlic clove, grated
- 2 teaspoons Dijon mustard
- 1 1/2 teaspoons honey
- Salt and pepper to taste
- 1/2 cup olive oil
- 2 tablespoons fresh herbs (thyme, basil, parsley)
Salad
- 3 cups chopped lettuce
- 1/2 cup parmesan cheese, grated
- Salt and pepper to taste
Instructions
1. Make the lemon vinaigrette. In a medium size mason jar, or jar with a lid, add all ingredients for vinaigrette. Shake to combine.
2. In a large bowl, add lettuce, parmesan cheese, and freshly grated black pepper. Drizzle the dressing over the salad just before serving. Toss to combine. Enjoy!
