Lemon Curd

This Lemon Curd is SUPER EASY and only requires 4 ingredients. This lemon curd has the perfect balance of sweet and tart flavors and pairs perfectly with cheesecakes, cakes, cupcakes, and so much more. It’s smooth, creamy and so delicious!

Mix together the lemon zest and sugar

To begin making the lemon curd, you’ll mix the sugar and lemon zest in a small bowl. Use your hands to massage the zest into the sugar. This helps to release all the lemon oils from the zest and gives the utmost lemon flavor.

whisk together the egg yolks and sugar

In a small saucepan, whisk together the egg yolks and lemon sugar, until pale yellow in color. Slowly, whisk in the lemon juice until combined.

Heat low and slow

Over medum-low heat, heat the yolk/sugar mixture, whisking constantly. The mixture should thicken as it cooks. This takes roughly 10 minutes. It should coat the back of a wooden spoon when it’s done. The texture will be like pourable pudding.

stir in the butter

Remove the lemon curd from the heat and stir in the cold, cubed butter. This helps the mixture cool off as well. Stir until the butter is melted and fully combined.

This step is optional, but I like to strain my mixture through a fine mesh sieve. This helps to create the smoothest texture in the lemon curd.

allow to cool

I know, I know, I don’t like waiting around either, but you have to let the lemon curd chill in the fridge for several hours to firm up. As it cools it will get thicker.

Add to a sealable jar and place in refrigerator to cool for several hours. Once chilled, it will be like spreadable pudding.

Ingredients

  • 5 egg yolks
  • 3/4 cup granulated sugar
  • Zest of 1 lemon
  • 1/4 cup lemon juice (juice from roughly 1-2 lemons)
  • 6 tablespoons unsalted butter

Instructions

1. In a small bowl, add lemon zest and sugar. Using your hands rub the zest into the sugars. This helps release the lemon oils and gives the utmost lemon flavor.

2. Add the lemon sugar and yolks to a small saucepan. Whisk to combine.

3. Whisk in the lemon juice, gradually until combined.

4. Over medium-low heat, heat the mixture for roughly 10 minutes, whisking constantly until thickened. The mixture should coat the back of a wooden spoon. The texture should be like pourable pudding.

5. remove from the heat and stir in the cold, cubed butter until completely melted and combined.

6. This step is optional, but you can strain the mixture through a fine mesh sieve to give a really nice, smooth consistency.

7. Pour the mixture into a resealable jar. Place in fridge to cool for 4 hours. The mixture should be like spreadable pudding once completely chilled.
