Lasagna Soup

Lasagna Soup is the perfect cozy meal. It’s loaded with all the things you love about lasagna, but it’s way easier to make. Imagine a delicious rich tomato broth with tender lasagna noodles, garlic, onion, a delicious mixture of herbs and spices and tender beef. The soup is finished with a delicious, creamy, cheesy topping and fresh basil. This is a meal you’ll want to make again and again.

Talk about comfort food season. We are here! And I am here for it. Although I do have to say I prefer the warm summer weather over the winter weather. But, I do love the cozy winter meals. This Lasagna Soup is one of my favorites. It’s loaded with all of the delicious lasagna flavors, but with much less work.

The details

Browning the beef

I begin by making this lasagna soup by browning the beef. Certainly you can cook the onion first, if you want a few less dishes. However, the reason I begin the soup this way is because by cooking the beef first, the onion gets to cook in the delicious flavors from the beef fat. Essentially this maximizes the flavor of the soup.

Cooking the onion, then adding in the remaining ingredients

If you choose to brown the beef first, you’ll remove the beef from the pan, then add in the onion. Cook the onion for 5 minutes, then add in the garlic and cook additional minute. This additional minute helps bring out the garlic flavor.

Next, you’ll add the beef back in, then add the remaining ingredients EXCEPT the lasagna noodles.

Cooking the lasagna noodles

Bring the soup to a boil, then add in the lasagna noodles. Reduce the heat and cook for 10 minutes or until noodles are tender. Remove the soup from the heat.

In a small bowl, mix together the three cheeses (ricotta, parmesan and mozzarella) until combined. Serve the soup hot with a dollop of cheese mixture on top. Add fresh basil and enjoy!

The soup is finished with a delicious, creamy, cheesy topping and fresh basil. This is a meal you’ll want to make again and again.


Ingredients

Units Scale
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 6 cloves garlic, minced
  • 1 pound lean ground beef
  • Salt and pepper, to taste
  • 2 teaspoons dried parsley
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 2 bay leaves
  • 3 sprigs fresh thyme
  • 8 cups beef broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 can (6 ounces) tomato paste
  • 9 lasagna noodles, broken into pieces

Cheese topping

  • 1 1/2 cups Ricotta Cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated

Instructions

1. Add olive oil to large pot over medium heat.

2. Add onion and garlic to pot. Cook 4 minutes, stirring occasionally, until softened.

3. Add in ground beef. Cook, breaking apart as it cooks, until browned.

4. Using kitchen twine, tie the bay leaves and thyme sprigs together.

5. Add the remaining ingredients to the pot, including the tied bay leaves/thyme. Stir to combine.

5. Bring to a boil, then reduce the heat to medium-low until noodles are tender (roughly 8 minutes), stirring occasionally.

6. In a small bowl stir together ricotta cheese, mozzarella and parmesan.

7. Remove soup from the heat, serve with a dollop of cheese mixture and enjoy!
