Description

This Italian Grinder Sub is piled high with a variety of Italian meats, cheese, and a delicious grinder salad. This only takes a few minutes to assemble, and is perfect for get togethers, picnics, or any time you’re just craving a good sub.


Ingredients

Sub

  • 3/4 pound thinly sliced deli ham
  • 3/4 pound thinly sliced deli turkey
  • 12 ounces prosciutto
  • 8 ounces genoa salami
  • 8 ounces thinly sliced pepperoni
  • 3/4 pound provolone cheese, medium sliced
  • Salt and pepper, to taste
  • pepperoncini

Grinder Salad

  • 1 head romaine lettuce, chopped
  • 1 cup mayonnaise
  • 3 tablespoons red wine vinegar
  • Juice of 1 lemon
  • 1/2 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano (or 1 teaspoon dried)
  • Salt and pepper to taste

Instructions

1. In a large bowl with a lid, add all ingredients for grinder salad. Place the lid on the bowl and shake to combine.

2. Hollow out the center of the sub. Scoop out the center of the sub. This allows for more toppings to be stuffed into the sub. 

3. Layer the sub. Add cheese down center of sub. Toast in 350F oven for a few minutes until cheese is melted (you can skip this step if you don’t want the cheese melted). Add the ham, turkey and prosciutto on one side of the sub. On the other side, add salami, and pepperoni.  Add the grinder salad in the center, then pepperoncini on top.

3. Serve and enjoy!
