Ingredients
Hot Honey Sauce
- 3 tablespoons unsalted butter
- 3 tablespoons honey
- 3 1/2 tablespoons hot sauce
Salmon Melt
- 10 ounces canned salmon
- 1/4 purple onion, finely chopped
- 1 celery stalk, finely chopped
- 2 tablespoons fresh dill
- 1/2 cup mayonnaise or Greek yogurt
- Juice of 1/2 lemon
- Salt and pepper, to taste
- 4 slices sourdough bread
- 4 slices cheddar cheese
- 1 large tomato, sliced
Instructions
1. Make the hot honey sauce. In a small saucepot over medium-low heat, melt butter. Once butter is melted, add the honey and hot sauce. Simmer for 2-3 minutes to slightly thicken the sauce. Remove from heat.
2. Make the salmon melt. In a large bowl, add canned salmon, onion, celery, dill, mayonnaise (or Greek yogurt) and lemon juice. Season with salt and pepper to taste. Add in the hot honey sauce and stir to combine.
3. Butter both sides of slices of sourdough bread. Toast bread in a large skillet over medium-low heat, flipping to toast both sides. Toast until light golden brown.
4. Assemble. Place 2 slices cheddar cheese on one piece of bread. You can either leave the cheese unmelted or melt the cheese. To melt the cheese, add the top piece of bread on top of the cheese. Place back in the skillet to melt the cheese, flipping the sandwich so that one side doesn’t get too toasted.
Once the cheese is melted, pull the sandwich apart and place a slice of tomato on top of the cheese. Scoop the salmon mixture on top. Place piece of bread on top to finish the sandwich. Slice in half and enjoy!
