Honey Lime Avocado Corn Salad

This Honey Lime Avocado Corn Salad is the perfect fresh, delicious summer salad. It’s loaded with fresh grilled corn, cherry tomatoes, creamy avocado, zesty purple onion, fresh cilantro and tangy feta cheese. The dressing on this salad has a hint of sweetness which balances out the fresh lime juice perfectly. It’s great for your summer dinners, cookouts or just a tasty snack.

Once summer rolls around, I love corn on the cob. I can’t say I crave it during the cold winter months, but there’s just something about the warmer weather that makes me crave corn on the cob. My mom used to make corn on the cob slathered with butter, salt and pepper. It was simple, but so delicious!

This salad is simple, uses fresh ingredients and has so much of my favorite summer produce in it. My son LOVES corn on the cob, so this dish was a hit with my kids. You can’t beat fresh food.

Here’s what you need to know…

The corn is grilled to achieve the delicious smoky flavors of the grill. While the corn can be made directly on the grill in roughly 12 minutes, I found an unconventional way of making the corn. I boiled the corn for 4 minutes, then added the corn to the grill to get the grill marks and flavor of the grill. First of all, this allowed me to cook the corn in roughly half the time, because come supper time, I always feel like I don’t have enough time to get everything done. Secondly, this helped the corn retain more moisture. You can also cook the corn in aluminum foil on the grill, or in the husk, which helps the corn stay moist, but I did not try cooking the corn this way.

After the corn is cooked, the rest of the salad comes together in minutes. You simply add everything to the bowl and mix it together. I did not add the avocado until the end, because I didn’t want the avocado to get squished when I mixed everything together.

Now, let’s quickly talk about the dressing. I used lime juice, olive oil and honey. The sweetness of the honey balances really well with the sour taste of the lime. The olive oil really helps to add extra flavor to the salad.

Ingredients

Units Scale
  • 2 ears corn
  • 1 avocado, cut into small pieces
  • 1/4 purple onion, thinly sliced
  • 2 cups cherry tomatoes, sliced in half
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup feta cheese
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • dash of salt

Instructions

1. Turn grill to medium high. Husk the corn, then brush all over with olive oil. Grill corn directly on grill for roughly 12-15 minutes, turning frequently. Another method, that is certainly not conventional, but yields moist corn, is to boil the corn for 4 minutes, then cook on grill for a few minutes to get a few charred spots. This will still give you the grilled corn flavor, but the corn will be more moist.

2. In a large bowl add all ingredients, except avocado (so it doesn’t get smashed). Toss ingredients to combine.

3. Add avocado and gently toss ingredients one more time to combine. Serve and enjoy!
