Homemade Pasta (no machine needed)

You truly can’t beat fresh, homemade pasta. This recipe takes only 4 ingredients, is simple to make and delivers perfect al dente noodles. Pair this pasta with your favorite sauce for a delicious meal. No special equipment required to make this – just a rolling pin and a bowl.

Making the dough

In a large bowl, add the flour, eggs, salt and olive oil. Break the egg yolks with a fork. Using a bowl scraper, like this one, or using your hands, bring the mixture from the outside to the center. Continue working in this manner until a shaggy dough forms. Knead the dough for 8 minutes. It will feel dry initially, but as you knead the dough it comes together. If the dough continues to feel dry, moisten your fingers with water and continue to work the dough until it comes together. Alternatively, if the dough is to wet, add a sprinkle of flour and work into the dough until the dough is smooth and no longer sticky.

Wrap the dough in plastic wrap and allow to rest for 45 minutes at room temperature. This rest period is crucial, because it allows for the dough to fully hydrate and makes it easier to work with. The end result is chewy, bouncy noodles.

Roling the dough

Divide the dough into 4 pieces. Working with one piece at a time on a floured surface, and keeping the others wrapped in plastic wrap, roll the dough into roughly 1/16 inch. You don’t want a thick noodle. Think of how thick the pasta noodles are at the store. It doesn’t have to be exact, but overall you want it relatively thin.

Using a bench knife, or a knife, cut the noodles into desired thickness. Repeat with remaining dough.

Fresh pasta only takes a few minutes to cook. Cook the pasta in a pot of salted, boiling water for 1-2 minutes. Fresh pasta can be stored in the refrigerator, wrapped in plastic wrap for up to 2 days.

Pair this pasta with a homemade spaghetti sauce, a delicious alfredo sauce, or your favorite sauce.

  • 2 1/2 cups all-purpose flour
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1 1/2 tablespoon olive oil

Instructions

1. In a large bowl, add the flour, eggs, salt and olive oil. Break the yolks with a fork.

3. Wrap the dough in plastic wrap and allow to rest for 45 minutes. This rest period makes the dough easier to handle and allows for the dough to have the chewy, bouncy texture you want.

4. On a floured surface, divide into 4 pieces. Keep 3 of the pieces covered. Working with one piece, roll on a floured surface into roughly 1/16th inch. You want the dough relatively thin.

5. Cut the dough into your desired thickness using a knife or bench knife. Repeat with remaining dough.

6. Bring a large pot of salted water to a boil. Boil for 1-2 minutes. Enjoy with your favorite sauce!

Notes

Fresh pasta can be stored, wrapped in plastic wrap, for up to 2 days in the fridge.
