Description

These Fluffy Pancakes are crisp around the edges and have a delicious fluffy interior. They are simple and take only 10 minutes to mix together, using pantry staple ingredients. These freeze well, so you can make them for the week ahead and enjoy throughout the week.


Ingredients

Units Scale
  • 2 1/4 cups all purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 3/4 cups milk
  • 1 1/2 tablespoons lemon juice
  • 2 large eggs
  • 1/4 cup unsalted butter, melted

Instructions

1. In a measuring cup, stir together the milk and lemon juice. Allow to sit for 5 minutes.

2. Add flour, sugar, baking powder, baking soda and salt to a bowl, and whisk to combine. Add the milk/lemon juice mixture, eggs and melted butter. Whisk until batter is combined. It’s okay if it is lumpy.

3. Melt 1 tablespoon butter in skillet set over medium-low heat. Add a drizzle of vegetable oil. Scoop batter by 3-4 tablespoon measurements. Once bubbles appear on surface and pancake is golden on underside, flip with spatula. Cook until golden brown. Repeat with remaining pancakes. You may need to add more butter in between pancakes to prevent pancakes from sticking.

4. Serve with fresh fruit and syrup, if desired. Enjoy!

Notes

  • I like using the combination of butter and oil for cooking the pancakes. The butter adds flavor, and the oil helps creates the crispy edges.
  • The addition of lemon juice to the milk creates a tangy taste in the milk mixture. The lemon juice also helps to make the pancakes lighter and fluffier. You can substitute this mixture for buttermilk, if you have it on hand.
