Grilled Lemon Herb Chicken and Potatoes

A fresh Lemon Herb sauce is smothered over chicken and potatoes, creating an irresistible blend of fresh flavors. This meal is simple and quick, and perfect for summer nights, because there is no oven required. The Lemon Herb Sauce is brushed over the chicken and tossed with the potatoes, prior to grilling to add flavor. The crisp texture, and delicate grilled flavor on both the chicken and potatoes, combined with the sauce make this dish stand out.

Summer always reminds me of grilling. Most people don’t want to use their ovens, especially when the temperatures exceed 90 degrees fahrenheit, so the grill is the perfect alternative. Aside from that, grilling food gives the food a delicious level of flavor that is unmatched from just cooking the food in the oven or on the stovetop.

This Grilled Lemon Herb Chicken and Potatoes is a simple meal that’s full of fresh ingredients. It comes together rather quickly, so it’s perfect for those busy summer nights.

Here’s what you need to know…

The potatoes are parboiled for 5 minutes in salted water prior to grilling. This allows two things. First, the potatoes get extra flavor from the salted water. Secondly, you are able to grill the potatoes at a higher temperature, resulting in a crisper exterior.

After making the Lemon Herb Sauce, you’ll want to divide the sauce. You will use 1/4 of the sauce for the chicken, then divide the remaining amount of sauce between the potatoes, and for the finished meal. Drizzling some of the sauce over the potatoes and chicken once it’s cooked adds a touch extra flavor and moisture.

Once the chicken is grilling, make sure you turn the chicken often, so that it does not burn and gets evenly cooked on all sides. The internal temperature of chicken should reach 165F when fully cooked.

If you are cooking on an outdoor grill, add your potatoes to a vegetable grill basket. If you are using an indoor grill plate, you may place the potatoes directly onto the grill plate. Toss or turn the potatoes occasionally as they grill.

Serve the grilled chicken and potatoes with the remaining sauce and enjoy!

Ingredients

  • 3 boneless, skinless chicken breasts, cut into cubes
  • 1.5 pounds baby potatoes, sliced in half

Lemon Pepper Sauce

  • Juice of 1 lemon
  • 2 tablespoons lemon zest
  • 3/4 cup olive oil
  • 1 clove garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh oregano, chopped
  • 2 tablespoons fresh thyme
  • Salt and pepper to taste

Instructions

1. Parboil potatoes in salted water for 5 minutes.

2. Meanwhile, make the Lemon Pepper Sauce. Whisk together all ingredients in medium sized bowl. Pour ¼ of the sauce into a bowl. This will be used to brush over the chicken.

3. Add chicken cubes to a skewer. Using the bowl with ¼ of the sauce in it, brush Lemon Herb Sauce over chicken, coating all sides. Discard Lemon Herb Sauce that you used to brush the chicken with.

4. Drain the potatoes and add potatoes to large bowl. Pour half of the remaining Lemon Herb Sauce over potatoes. You want to reserve the rest for use once the meal is cooked. Toss to fully coat the potatoes.

5. Place chicken on preheated medium-high heat grill.  Add potatoes to a vegetable grill basket, cut side down, or if you have an indoor grill plate, you may add directly on top of the indoor grill plate.

6. Chicken: Grill for 10-15 minutes, turning every couple minutes, or until chicken is golden brown and fully cooked (internal temperature should be 165F). Remove chicken from grill.

7. Potatoes: Grill the potatoes for 2-4 minutes, or until lightly browned and heated through. Turn/toss potatoes occasionally.

8. Serve grilled chicken and potatoes. Drizzle remaining Lemon Herb Sauce over chicken and potatoes. Enjoy!
