Grilled Bruschetta Chicken
Grilled Bruschetta Chicken – This chicken is simple, flavorful and can be made in under 30 minutes. Chicken is marinaded in a blend of spices, garlic and lemon juice, then grilled to achieve juicy, flavorful chicken. The bruschetta topping is made with fresh tomatoes, basil and garlic and a delicious dressing that pairs perfectly with the chicken.

If you are finding yourself in excess of cherry tomatoes, this recipe is a great use for them. We have a small garden in our yard and every year we plant tomato plants. This year, we may have gone a little overboard and planted more tomato plants than we need. Meaning, we will be eating tomatoes for breakfast, lunch and dinner. Maybe even dessert :).
I love how quickly this meal comes together. During the warm summer days, I always crave to be outside. I don’t want to spend my entire afternoon cooking dinner. A meal like this is perfect for these days.
Here’s what you need to know…
The chicken needs to marinate for 15 minutes. This will help tenderize the chicken and impart flavor into the chicken. Marinate the chicken in the refrigerator, so that you don’t run any risk of bacteria growing on your meat.

While the chicken marinates, you can make the bruschetta topping. Simply add all ingredients to a large bowl and toss to combine. Cover the bowl and place in refrigerator until ready to use.

Once the chicken is ready to be grilled, remove from the refrigerator and place chicken breast on preheated medium-high heat grill. Grill the chicken for 4-5 minutes per side, or until the internal temperature is 165 degrees Fahrenheit.
Once the chicken is cooked through, serve with the bruschetta topping. I like to drizzle my chicken with a spoonful of the sauce from the bruschetta topping. I served my chicken with homefries and in case you’d like to do the same, here is how I made them. I sliced a russet potato into french fry shaped wedges, then fried them in vegetable oil in a large skillet until golden brown, turning often so that all sides cooked evenly. Place the homefries into a large bowl and season with salt and pepper. Gently toss to combine. These homefries will be soft. They are not crispy like french fries, since I did not soak them in cold water prior to frying. Soaking in cold water helps to remove some of the excess starch and allows the potatoes to get crisper when fried or baked.

Ingredients
Chicken
- 1/4 cup olive oil
- Juice of 1 lemon
- 4 boneless, skinless chicken breasts (if chicken is thick, you can use 2 pieces and cut in half horizontally)
- 1 teaspoon paprika
- 2 teaspoons oregano
- 1 clove garlic, grated
- Salt and pepper
Bruschetta
- 2 cups cherry tomatoes, sliced in half
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper
Instructions
1. In a large bowl, add the olive oil, lemon juice, paprika, oregano, grated garlic, and season with salt and pepper. Whisk to combine, then add in the chicken. Toss to coat. Cover the chicken and place in refrigerator for 15 minutes.
2. Meanwhile, make the bruschetta. Add all ingredients for the bruschetta to a bowl, and toss to combine. Cover and place in refrigerator.
3. Remove chicken from marinade and place chicken on preheated medium-high heat grill. Grill chicken for 4-5 minutes per side, until golden brown and the internal temperature is 165 degrees Fahrenheit.
4. Serve chicken with bruschetta tomatoes on top. Drizzle with extra sauce from the bruschetta if desired.
