Gingerbread Waffles

Cozy December mornings are made better with Gingerbread Waffles. These waffles are soft and fluffy on the inside, and crispy on the outside. They are made with just the right amount of sweetness and all of the cozy gingerbread spices. Make them for your week ahead (they freeze great), or morning of. They only take minutes to make and would make a great Christmas breakfast.

‘Tis the season for all things Gingerbread. I love gingerbread, BUT I don’t like when it’s heavy on the spices. These Gingerbread waffles have just the right amount of spice without being overpowering. Plus they are the perfect balance of crisp on the outside and fluffy on the inside. So, if you are still looking for Christmas breakfast ideas, I highly recommend making these. They can be made in one bowl, no mixer required, and only take a few minutes to mix and bake up.

To be honest, I haven’t decided what I plan to make for our Christmas breakfast, but these are high on the list. My cinnamon rolls are also an option. Which do you think I should make?

Don’t you love a recipe that only has a couple steps? That is this recipe. There isn’t much to explain here, because this recipe is so simple to make. That’s why it is the perfect Christmas breakfast :).

You don’t need any fancy mixer to make these waffles. Just a bowl and a whisk. Simply add all ingredients to the bowl and mix. It’s okay if the batter is not perfectly smooth. I used Lifeway Kefir in my waffle batter. Lifeway Kefir is a tart and tangy cultured milk. It contains probiotics, is high in protein, calcium and vitamin D. I’ve also made these waffles with regular milk and they turn out just as good, so you can easily substitute if you desire. I do like the extra nutrition that the Lifeway Kefir adds, though, to the batter.

Next up, you’ll cook the waffles in your waffle maker according to your waffle maker settings. One note on this is to not overfill the batter. I’ve done this far too many times, and cleaning it out is a pain! Usually when you fill the batter into the waffle grid, it appears like you won’t have enough, but the batter usually spreads out a decent amount in the waffle grid.

Serve and enjoy

Serve these waffles as is, with butter, or with syrup. I can tell you, we’ve had them all ways. My husband is actually diabetic, so he never uses syrup. I LOVE syrup, so I make up for the use of syrup for both of us. And, my kids, well, they love syrup too, but can be messy with it. So, they’ve had them both with and without syrup and loved them both ways.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon allspice
  • 1/4 teaspoon cloves
  • 1 large egg
  • 1/4 cup molasses
  • 1 1/4 cups whole milk or Lifeway Kefir whole milk (for added nutrition)

Instructions

1. In a large bowl, add the egg, molasses and @lifewaykefir whole milk. Whisk to combine. Add in the remaining ingredients and whisk just until ingredients are combined.

2. Heat a waffle iron. Spray the waffle iron with nonstick spray. Scoop batter into each waffle grid. Cook according to your waffle maker.

3. Serve with butter and syrup if desired and enjoy!
