Garlic Steak Bites with Crispy Potatoes

These Garlic Steak Bites with Crispy Potatoes are an irresistible meal. The steak is tender, juicy and bursting with delicious flavors from the garlic butter sauce. The Crispy Potatoes are fluffy on the inside and golden crisp on the outside. The potatoes are tossed in a garlic butter sauce that makes them so delicious.

There’s something about potatoes paired with steak. They just go together! I don’t eat steak often, but when I do, I really enjoy it. This garlic steak bites recipe is really easy. The steak bites can be cooked in 5 minutes. That’s it! The potatoes do take a bit longer, but trust me, the potatoes are worth it! But, if you choose to skip the potatoes and make a different side, you can have a meal ready on the table in under 20 minutes.

Here’s what you need to know…

In this recipe, I made my own butter, but you certainly don’t have to. If you have kids, or are planning a date night, I vote for making your own butter. It’s a fun thing to do with others! Otherwise, store bought is perfectly fine. Butter is mixed with fresh garlic and fresh herbs which creates a delicious sauce for the steak and potatoes.

The potatoes are actually quite simple. They just take time. After melting butter in the skillet, you’ll add them to the skillet, cut side down and cook undisturbed for 20 minutes. The lid is on during this cooking time, so that the potatoes don’t dry out. After the 20 minutes are up, you’ll flip the potatoes, increase the heat to medium-high and cook an additional 5 minutes. That’s it! Not much effort, just a little bit of patience.

The steak bites are easy and fast. After heating olive oil in the pan on high heat, you’ll add the steak, season with salt and pepper and cook undisturbed for 2 minutes. This will create a good golden brown sear on the steak. Cook an additional 2-3 minutes, stirring the steak bites until browned on all sides.

In the same skillet, you’ll melt butter, then add the steak bites and potatoes to the melted butter. Toss to combine to evenly coat everything. The garlic butter gives the steak and potatoes a delicious flavor.

Ingredients

Garlic Herb Butter

  • 1 stick (1/2 cup) butter, softened (if you make homemade butter, you need 1 cup heavy whipping cream)
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 3 cloves garlic, minced

Potatoes

  • 3 Russet Potatoes, cut into bite size pieces
  • 2 tablespoons Garlic Herb Butter
  • Salt and pepper

Steak

  • 1 tablespoon olive oil
  • 1 1/2 pounds strip steak, cut into bite size pieces
  • Salt and pepper to taste

Garlic Butter Sauce

  • 4 tablespoons Garlic Herb Butter

Instructions

1. If you make your own butter, add heavy cream to a stand mixer fitted with the paddle attachment. Place splash shield on bowl to prevent splashing. Beat on high speed until the butter separates from the cream. This will take roughly 3 minutes.  Use a spoon to gather the butter out of the cream and off the paddle. The remaining liquid is buttermilk. You can freeze this and use for later in baking recipes.

2. Make Garlic Herb Butter. Place butter in medium size bowl. Add parsley, chives and garlic. Use your hands to blend everything together. If you made your own butter, place the butter in a bowl filled with ice water. Change the water a few times until the water runs clean. Wrap the butter in plastic wrap or parchment paper.

3. Make the crispy potatoes. In a large skillet, melt 2 tablespoons Garlic Herb Butte over medium-low heat. Add potatoes, cut side down. Season with salt and pepper. Cover the skillet and cook, undisturbed for 20 minutes. Uncover, and flip potatoes, using tongs. Increase heat to medium-high. Cook additional 5-10 minutes more, moving potatoes around as needed for even browning. Remove potatoes from skillet.

4. Make the steak. In the same skillet, heat 1 tablespoon olive oil over high heat. Add steak and season with salt and pepper. Cook, undisturbed for 2 minutes to achieve a golden brown sear. Continue cooking an additional 2-3 minutes, stirring the steak pieces to evenly cook all sides. Remove the steak from the skillet.

5. Make the Garlic Butter Sauce. In the same skillet, over medium heat, melt 4 tablespoons Garlic Herb Butter. Add the steak and potatoes to the skillet. Toss to coat everything in the garlic butter sauce.
