Garlic Herb Grilled Cheese
This Garlic Herb Grilled Cheese is the ultimate Grilled Cheese. The outside of the bread is coated in a garlic herb butter, which develops the perfect golden, crisp crust in the pan. The center of the sandwich is filled with a blend of gouda and sharp cheddar cheese, which is the perfect, creamy, cheesy combo that just melts in your mouth.
Grilled cheese sandwiches were one of my go to meals as a kid. You really can’t go wrong with two slices of buttery bread, toasted in a skillet with cheese in the center. The gooey cheesy center was always my favorite part, and still is to this day. Now that I’m an adult, I enjoy experimenting with different flavors and making my nostalgic favorites with a bit more flavor.
This Garlic Herb Grilled Cheese is still filled with the essentials – the buttery toasted bread and melty cheese center. However, the buttery toasted bread has a mixture of roasted garlic and fresh herbs that make this sandwich so good. The center cheese of gouda and sharp cheddar are like a match made in heaven. The smokiness of the gouda cheese combined with the creamy sharp texture of the cheddar cheese pair perfectly well together.

Here’s what you need to know…
I made this grilled cheese recipe with this tomato soup, so I roasted the garlic along with the vegetables in the tomato soup. If you don’t pair it with the tomato soup, it’s not a big deal. Just follow the instructions for roasting garlic in the recipe.
Cook the over medium-low heat. If you’re like me, you just want to crank up the heat and make it get done faster, but, trust me. Cooking it over a lower heat will yield the perfect even golden brown crust that makes a grilled cheese so good.
The best cheese for grilled cheese in my opinion is gouda and cheddar cheese. Gouda and cheddar cheese pair well together. The smokiness of the gouda cheese combined with the creamy sharp texture of the cheddar cheese balance each other out. This mixture is commonly used in mac and cheese. It tastes amazing.

Ingredients
- 4 slices sourdough bread
- 4 slices cheddar cheese
- 4 slices gouda cheese
- 1 garlic head
- 4 tablespoons butter, softened
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh basil, chopped (or 1 teaspoon dried)
Instructions
1. Preheat oven to 400F. Slice a garlic head in half horizontally. Place each half on a square of aluminum foil. Drizzle with olive oil and season with salt and pepper. Loosely wrap up garlic. Place tinfoil packet directly on oven grates, or you may place on sheet pan and place in oven. Roast for 30 minutes.
2. In a small bowl, squeeze roasted garlic out of shell into a small bowl. Add softened butter, parsley, thyme and basil. Stir to combine.
2. Spread garlic herb butter spread on one side of all pieces of bread. Add 1-2 slices bread, butter side down to skillet, set over medium-low heat. Add two slices cheddar and two slices gouda cheese on top of the bread. Add top piece of bread, butter side facing up.
3. Cook grilled cheese until bread is light golden brown, then flip and cook until remaining side is golden brown and cheese is melted. Serve and enjoy!
