These Flaky Sausage Cheese Cups are an easy appetizer and are melt in your mouth delicious. Flaky phyllo dough is placed in a muffin tin. A creamy, cheesy, spicy sausage mixture fills the phyllo dough cups. The phyllo dough is baked until golden and crispy. Each bite is a hint spicy, cheesy, and perfectly crunchy.

I made these Flaky Sausage Cheese Cups a few years ago and sort of forgot about them until recently. I had some extra breakfast sausage I needed to use up and figured this recipe would be a great use for it. These sausage phyllo cups are incredibly easy to make, and they are packed with flavor. My favorite part about these, though, is the crunchy phyllo dough. It gets golden and crispy when baked in the oven and when it is paired with the sausage, it is just so good. If you are looking for a sausage appetizer to make, this is the one to make!

The details

These sausage phyllo cups use frozen phyllo dough. The phyllo dough I buy comes in a box with two rolls of phyllo dough. Each roll of phyllo dough has roughly 18 sheets of phyllo dough. To make the cups, I used one whole roll of phyllo dough. Phyllo dough is very thin, so you want to use more than one sheet so that it is sturdy enough to hold the filling.

Making the phyllo cups

Cut one roll of phyllo dough into 6 pieces. From here, you will divide each of the 6 pieces into two, so you will have 12 pieces of phyllo dough. Gently place each piece of phyllo dough into a greased 12-count muffin tin. Use your hand to gently press the phyllo dough down into the cavity of the muffin tin.

Gently brush the phyllo dough with a beaten egg. This will give the phyllo dough a nice golden brown color when it bakes.

Making the sausage

In a medium skillet over medium heat, cook the sausage until browned and cooked through. Add the cream cheese and cheddar cheese and stir until combined and melted.

assemble and bake

Evenly divide the sausage mixture into the 12 cups. Bake in a preheated 375F oven for 15 minutes, or until golden brown. You can garnish the sausage bites with fresh parsley to make them look fancy, or just eat them as is.
