These Dill Cheddar Sandwich Pockets are a fun way to enjoy a sandwich. Soft dough is flavored with fresh dill, then rolled into circles. Half of the circle is brushed with softened butter, which creates the pocket when the dough is baked. The pockets are topped with cheddar cheese that gets melty and delicious when baked.

Description

These Dill Cheddar Sandwich Pockets are a fun way to enjoy a sandwich. Soft dough is flavored with fresh dill, then rolled into circles. Half of the circle is brushed with softened butter, which creates the pocket when the dough is baked. The pockets are topped with cheddar cheese that gets melty and delicious when baked.  


Ingredients

Dough

  • 2 1/4 teaspoons instant yeast (7 grams)
  • 1 1/4 cup water (260 grams)
  • 1 tablespoon granulated sugar (12 grams)
  • 3 3/4 cups all-purpose flour (465 grams)
  • 2 tablespoons olive oil (22 grams)
  • 1 teaspoon salt (6 grams)
  • 2 tablespoons plain yogurt (40 grams)

Topping

  • Softened butter (to spread on inside of dough)
  • Cheddar Cheese

Instructions

1. In the bowl of a stand mixer fitted with the dough hook attachment, add all ingredients except the dill and cheese. Knead on medium speed for 5 minutes, then transfer dough to a lightly floured surface. Sprinkle dill over dough. Fold the dill into the dough. Place dough in greased bowl. Spray top of dough with nonstick spray, then cover with plastic wrap.

2. Preheat oven to 100F. Once the oven reaches this temperature, turn the oven off. Place covered dough in warm oven and allow to rise for 45 minutes.

3. Divide dough into 8 roughly equal pieces. Roll each piece into a 9-inch circle. Spread softened butter on half the circle, then fold the circle in half. Place on a parchment paper lined baking sheet. Cover and allow to rest at room temperature for 15 minutes.

4. Preheat oven to 475F.

5. Sprinkle cheddar cheese on top of the dough.  Bake in preheated oven for 10 minutes, or until cheese is melted and bread is golden brown.

6. Stuff the sandwich pockets with all your favorite fixings. Enjoy!
