These Crispy Oven Roasted Potatoes are perfectly crispy and golden on the outside, yet soft and fluffy on the inside. After roasting, the potatoes get tossed in a fresh garlic herb oil and a sprinkle of freshly grated parmesan cheese. These potatoes pair perfectly with any meal, and are always a crowd favorite for Thanksgiving, Christmas or really any family get together.
The weather has suddenly gotten COLD, and while I am more of a summer weather gal, the colder weather always reminds me of the holiday season. I’m really excited for Thanksgiving next week and all the delicious food. Although it will be a bit bittersweet this year with the recent loss of my dad. It’s hard to believe that just last year my family was planning our Thanksgiving feast to have with my mom and dad. I’m thankful for all the time I was blessed with and the many wonderful memories I have with my dad. He will certainly be missed during this Holiday season.
With my four little kids, I am planning to make ALL the easy Thanksgiving sides I can. These Crispy Oven Roasted Potatoes are perfect for that. Honestly these potatoes are so good, I’ve now added them into a few of our weeknight dinner rotations. They truly would be good for any holiday celebration – Christmas, Easter, Mother’s Day, Father’s Day, etc.

Which Potatoes are best for roasting?
Both Russet or Yukon Gold Potatoes are good choices for roasting.

Yukon Gold potatoes are one of the top choices for making the best crispy oven roasted potatoes. They are able to hold their shape well after roasting, and not fall apart. These potatoes also have a delicious buttery, creamy center.
russet potatoes
Russet potatoes are my second favorite choice for crispy oven roasted potatoes. These potatoes are a bit more starchy, which results in a more fluffy interior, rather than creamy. The higher starch does create a nice, crisp crust. Russet potatoes, are really great for making those steakhouse-style wedge fries.
Either potato you choose will result in delicious crispy oven roasted potatoes.
How to roast potatoes
A lot of crispy oven roasted potato recipes use goose or duck fat. Both of these fats have a high smoking point, as well as a high fat content, which adds to the richness and decadence of the potatoes.
For this crispy oven roasted potatoes recipe, I used olive oil, mainly due to it’s convenience, but also due to the fact that olive oil’s smoke point, while lower than goose and duck fat, is still high enough to effectively roast potatoes.

It is important to parboil the potatoes before roasting. This helps to create the best crispy exterior and tender interior. I like to add fresh thyme to the water that the potatoes boil in to infuse some flavor into the potatoes. After parboiling, the potatoes are shaken in your cooking pot, or colander to create rough edges. These rough edges create more surfaces for the potatoes to brown and get crispy.

Another key to creating the best crispy oven roasted potatoes, is to stir the potatoes every 15 minutes or so while roasting. This helps to ensure even roasting and re-coats the potatoes in the oil to help achieve a crisper crust.
Ready to serve
Once the potatoes are done roasting, I like to add whole, peeled garlic and some fresh herbs. My favorites are rosemary and thyme. Stir these around in the hot oil and allow to cook a few minutes in the hot oil. The hot oil will draw the fragrances out of the garlic and fresh herbs and infuse the flavor into the potatoes.
I like to sprinkle these crispy oven roasted potatoes with a pinch of salt and freshly grated parmesan cheese before serving.

Ingredients
Potatoes
- 1 1/2 pounds Russet or Yukon Gold potatoes
- 3 fresh thyme sprigs
Roasting
- 3 tablespoons olive oil
- 3 sprigs fresh rosemary
- 3 sprigs fresh thyme
- 2 garlic cloves, peeled
Serving
- Salt, to taste
- Freshly grated parmesan cheese
Instructions
1. Preheat oven to 425F.
2. Wash, peel and cut potatoes into 1 inch cubes.
3. Bring a large pot of salted water to a boil. Add the potatoes, as well as the fresh thyme sprigs to the boiling water and parboil for 8 minutes. Drain into a colander. Shake the potatoes in the colander to rough up the edges (this helps create more edges for the crispy exterior). Cover the potatoes with a kitchen towel and allow the steam to drain out excess water from the potatoes. Allow the potatoes to steam for 5 minutes.
4. Drizzle olive oil in a 9×13 inch baking pan. Place in oven and allow to heat for 5 minutes.
5. Add potatoes to hot oil. Stir to evenly coat. Roast potatoes in oven for 1 hour, stirring every 15 minutes
6. Add the fresh rosemary, thyme and garlic cloves. Stir the fresh herbs and garlic through the hot oil and potatoes for a few minutes.
7. Scoop the potatoes out of the hot oil into a serving bowl. Season with salt, to taste, and freshly grated parmesan cheese. Serve and enjoy!
