Creamy Tuscan Chicken Pasta

This simple Creamy Tuscan Chicken Pasta can be made in one pot in roughly 30 minutes. Juicy, tender chicken is flavored with a blend of spices and herbs, pan fried then tossed together with a rich, creamy sauce, pasta, freshly grated parmesan cheese, sun-dried tomatoes and spinach. If, by chance you have some leftover, this meal tastes just as good the next day.

This Creamy Tuscan Chicken Pasta may be my favorite meal to make. It can all be made in one pot, which I love (I mean who likes cleaning extra dishes? Certainly not me). Plus, this dish is approved by everyone in my family. Crispy chicken is flavored with a blend of spices, then tossed together with a creamy sauce and tender pasta. The entire meal only takes roughly 30 minutes to make, and I mean that! It’s easy, flavorful and something I guarantee you will want to make again and again.

The details

Making the chicken

This dish begins by making the chicken. Bite size pieces of chicken are tossed in spices and herbs, then tossed in flour or cornstarch. This helps seal in the moisture in the chicken, making the chicken ultra moist and juicy. Oil from the sun-dried tomato jar is used to pan fry the chicken, which gives the chicken a delicious flavor.

Making the sauce and cooking the pasta

The next part for this tuscan chicken pasta recipe is simple. Once the chicken is seared to achieve a crispy golden exterior, it is removed from the pan. You’ll use another bit of oil from the sun-dried tomato jar, then add in shallot and garlic and cook until fragrant.

Next, you will add in chicken broth and the pasta and add the chicken back in. Bring the mixture to a boil for 12 minutes. The pasta and chicken will cook during this time. While the pasta and chicken cook, you can measure out the remaining ingredients.

The finishing touches

Once the pasta and chicken are done cooking, you’ll reduce the heat to low, then add in the remaining ingredients (cream, spinach, mustard, seasonings, sun dried tomatoes). You will cook the mixture an additional 2 or so minutes to thicken the sauce, and that’s it!

Ingredients

Scale
  • 1 pound Rigatoni
  • 3 chicken breasts (cut into cubes)
  • 2 tablespoons Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • salt and pepper
  • 1/4 cup all-purpose flour or 3 tablespoons cornstarch
  • 2 tablespoons oil (from sun-dried tomato jar)
  • 2 cloves garlic (minced)
  • 1 shallot (chopped)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 6 cups chicken broth
  • 1 cup heavy cream or whole milk
  • 1 tablespoon dijon mustard
  • 1/2 cup parmesan cheese (shredded)
  • 1 cup baby spinach
  • fresh basil, for garnish

Instructions

  1. In a medium bowl, season chicken with salt, pepper, 1 tablespoon Italian seasoning, paprika and oregano. Toss to combine. Add flour or cornstarch to bowl and toss to combine.
  2. In a large skillet over medium heat, add 1 tablespoon oil from the sun-dried tomato jar. Add chicken and sear until golden on all sides. Remove from the skillet. Add 1/4 cup chicken broth to the skillet and cook a minute or two over medium heat to deglaze the pan. Pour the juices over the chicken.
  3. Add shallot, garlic and remaining tablespoon oil from sun-dried tomato jar to the same skillet. Cook until fragrant, roughly 2 minutes. Add in broth, pasta and chicken. Bring to a boil, then boil for 12 minutes.
  4. Stir in the remaining tablespoon Italian seasoning, salt, pepper, cream or milk, Dijon, parmesan, sun-dried tomatoes, and spinach. Cook additional 2 minutes on low heat.
  5. Serve with fresh basil and enjoy!
