Ingredients
Gnocchi and Sauce
- 1/2 yellow onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 1/2 cups chicken broth
- Juice of 2 lemons
- Zest of 2 lemons
- 1 tablespoon Dijon mustard
- 1 pound gnocchi
- 1/2 cup parmesan cheese
- 1 tablespoon fresh rosemary, chopped
- Salt and pepper to taste
- 2 cups baby spinach
Chicken
- 3 tablespoons olive oil
- 4 boneless, skinless chicken breasts
- 1/4 cup all purpose flour
- 1 teaspoon dried parsley
- 1/2 teaspoon dried thyme
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
1. Make the chicken. Add the parsley, thyme, onion powder, garlic powder, salt and pepper to a bowl. Stir to combine, then sprinkle the mixture over the chicken. Use your hand to rub the seasoning mixture into the chicken.
Add the flour to a shallow bowl. Coat both sides of the seasoned chicken in the flour mixture.
Heat the olive oil in a large skillet over medium heat. When the oil is hot, add the chicken to the skillet. Cook 4-5 minutes on each side, or until chicken reaches an internal temperature of 165F. Remove the chicken from the skillet and set aside.
2. In the same skillet over medium heat, add the onion and garlic (if there is excess oil, you may dab some of it out with a paper towel). Sauté, stirring frequently, for 3-4 minutes, or until the onion is softened. Add the cream, broth, lemon zest and juice and Dijon mustard. Add the gnocchi and bring sauce to a boil and boil for 2 minutes. Remove from the heat.
3. Stir in the spinach, parmesan cheese, fresh rosemary, salt and pepper. Add the chicken back in. Serve and enjoy!
