Coffee Cake Muffins with Cinnamon Sugar Swirl

These soft coffee cake muffins have a delicious cinnamon sugar swirl throughout and a buttery cinnamon sugar crumble on top. These are a great breakfast or brunch treat and are sure to be a crowd pleaser!
Ingredients
1/2 cup unsalted butter, melted (4 ounces)
1/2 cup granulated sugar (100 grams)
1/2 cup brown sugar (110 grams)
2 large eggs
1 teaspoon vanilla extract
2/3 cup sour cream (156 grams)
1/2 cup milk (118 mL)
2 cups all-purpose flour (240 grams)
1/2 teaspoon baking soda (3 grams)
2 teaspoons baking powder (8 grams)
1/2 teaspoon salt (3 grams)
1/2 teaspoon cinnamon
Cinnamon Sugar Swirl
1/4 cup granulated sugar
1 tablespoon ground cinnamon
Streusel
3 tablespoons brown sugar (45 grams)
1 tablespoon granulated sugar
3 tablespoons butter, melted
6 tablespoons flour
2 teaspoons cinnamon (21 grams)
Vanilla Icing
1/2 cup powdered sugar
1 tablespoon milk
1/4 teaspoon vanilla extract
Instructions
1. Preheat oven to 375F. Line a 12-count muffin tin with cupcake liners, or you may make your own liners.
2. Make the streusel. In a medium size bowl, add all ingredients for streusel. Use a fork to claw/mix the ingredients together. Place the streusel in the refrigerator to harden and set-up.
3. In a large mixing bowl, whisk together butter, sugars, vanilla, sour cream, milk and eggs until combined. Add in the flour, baking soda, baking powder, salt and cinnamon and mix just until combined.
4. In a small bowl, add ingredients for streusel. Using a fork, press the butter into the dry ingredients, until pea sized morsels are formed.
5. In a small bowl whisk together cinnamon and sugar for cinnamon sugar swirl.
6. Scoop roughly 1 tablespoon muffin batter into prepared muffin tin/liners. Sprinkle cinnamon sugar mixture over batter. Evenly divide remaining batter over top of the cinnamon sugar mixture. Sprinkle the streusel over the muffins.
7. Bake in oven for 18-24 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
8. In a small bowl, stir together ingredients for icing. Drizzle with icing. Serve and enjoy!
Notes
To make your own muffin liners: Cut 5 inch x 5 inch parchment paper squares. Place the center of the square on bottom of glass, and using hands, firmly press parchment paper against sides of glass. Place the muffin liners in muffin tin. If they don’t stick down into the wells, don’t worry, the muffin batter will hold them down into the tin.
Don’t overbake the muffins. The muffins will be done when a toothpick inserted into the center comes out clean. Overbaking the muffins can result in dry muffins.
Measuring the flour. Measuring the flour with a kitchen scale is the most accurate way to get the correct amount of flour. If you do not have a kitchen scale, make sure you fluff up the flour, by scooping the flour into your measuring cup with a spoon, then leveling the cup off with a knife. Too much flour can result in dry, dense muffins.
