Description

These Chocolate Chip Cruffins are flaky, buttery, and loaded with mini chocolate chips. These are relatively easy to make and the homemade dough only needs one rise time. Make these chocolate chip cruffins for a delicious breakfast or brunch treat.


Ingredients

Units Scale
  • 2 1/4 teaspoons instant yeast (1 packet)
  • 1/4 granulated sugar
  • 3/4 cup warm milk
  • 3 cups all-purpose flour
  • 6 tablespoons unsalted butter, softened
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips

Filling

  • 6 tablespoons unsalted butter, softened, divided

Egg wash

  • 1 large egg, beaten

Instructions

1. In the bowl of a stand mixer fitted with the dough hook attachment, add the yeast, sugar, milk, flour, butter, egg and salt. Knead on medium speed for 5 minutes. Transfer the dough to a greased bowl. Spray the top of the dough with nonstick spray, then cover with plastic wrap.

2. Preheat oven to 100F. Once the oven reaches this temperature, turn the oven off. Place the covered dough in the warm oven and allow to rise for 30 minutes. Alternatively, you can allow the dough to rise in a warm place for 1 hour.

3. Turn dough out onto floured surface. Flatten dough into a rough rectangle, then add mini chocolate chips to dough. Fold the dough in half to seal in the chocolate chips. Knead the dough lightly with your hands and roll into a ball to evenly distribute the chocolate chips throughout the dough.

4. Divide into 6 pieces. Working with one piece at a time, roll into a 12×7 inch rectangle. Spread 1 ½ tablespoons softened butter on rectangle. Starting at long end, roll into a log. Use a serrated knife and cut the log in half vertically, so that the layers of the dough are exposed. You will have two pieces of dough. Starting at one end of the dough, roll the dough into a spiral shape. Roll the next piece of dough into a spiral shape. Place the spiral into a greased 12-count muffin tin. Repeat with remaining pieces of dough. You will have 12 total.

5. Cover the dough with plastic wrap while the oven preheats to 350F.

6. Once the oven reaches temperature, brush the rolls with egg wash, then bake in oven for 20-25 minutes, or until golden brown in color. Allow to cool 2-3 minutes in muffin tin then transfer to wire cooling rack. Enjoy!
