Chipotle Chicken Mac and Cheese
Whenever my time is limited, I like to make this Chipotle Chicken mac and cheese. It’s creamy, extra cheesy and has a hint of spice. This cheese sauce uses flour and butter to thicken the sauce, has a blend of milk and heavy cream and uses a blend of spices that make it truly delicious. I added a splash of Worcestershire sauce to the cheese sauce, which really takes this mac and cheese up a notch.

Ingredients
- 2 boneless, skinless chicken breasts, cut into bite size pieces
- 2 1/2 teaspoons chipotle chili powder
- 1 teaspoon oregano
- Salt and pepper, to taste
- 2 1/2 cups large shell pasta noodles
Cheese Sauce
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1 cup heavy cream
- 1/2 tablespoon Worcestershire sauce
- 3/4 teaspoon mustard powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 cups cheddar cheese
Instructions
1. Bring a large pot of salted water to a boil. Boil pasta according to package directions. Drain pasta. Drizzle with olive oil and toss to coat (this helps the pasta from sticking together). Set aside.
2. In a large skillet, heat 1 tablespoon olive oil over medium heat. Season chicken with chili powder, oregano and salt and pepper. Add chicken to skillet. Cook, flipping halfway through, until internal temperature is 165F. Remove chicken from skillet and set aside.
3. In the same skillet, make the cheese sauce. Add the butter over medium heat. Once melted, whisk in flour. Cook 1 minute, then pour in milk and heavy cream. Add Worcestershire sauce, mustard powder, onion powder, paprika and salt and pepper. Whisk to combine. Cook until sauce begins to thicken, stirring frequently. Remove from heat, then stir in cheese until melted.
4. Add in pasta and chicken. Stir to combine. Serve and enjoy!
