These Butter Pecan Cookies are crisp around the edges and chewy in the middle. They’re made with brown sugar, toasted buttered pecans and are insanely delicious. They only take 10 minutes to bake and require no dough chill time.


Ingredients

Butter Pecans

  • 1 cup pecans, chopped (110 grams)
  • 2 tablespoons butter (1 ounce)
  • 1 tablespoon brown sugar (13 grams)

Cookies

  • 1/2 cup unsalted butter, melted (4 ounces)
  • 3/4 cup brown sugar (156 grams)
  • 1/4 cup granulated sugar (52 grams)
  • 2 teaspoons vanilla extract (8 grams)
  • 1 large egg
  • 3/4 teaspoon baking soda (3 grams)
  • 1/4 teaspoon baking powder (1 gram)
  • 1/2 teaspoon salt (3 grams)
  • 1 1/2 cups all-purpose flour (187 grams)
  • 1 tablespoon cornstarch (7 grams)
  • Chopped pecans, for decoration on top
  • brown sugar, for sprinkling on top

Instructions

1. Preheat oven to 350F. Line a baking sheet with parchment paper.

2. Make Butter Pecans. In a small saucepan, add butter, pecans and brown sugar. Stir, over medium heat, for 2-3 minutes, until butter and sugar are melted and pecans are lightly toasted. Remove from heat and set aside.

3. Make Cookie dough. In a large bowl, add melted butter, sugars, vanilla extract and egg. Whisk to combine. Add in baking soda, baking powder, salt, all-purpose flour, cornstarch and butter pecans. Mix cookie dough, just until combined.

4. Scoop cookie dough with a large 3 tablespoon cookie scoop onto parchment paper lined baking sheet. Flatten cookies with the palm of your hand. Sprinkle additional pecans on top as well as brown sugar.

5. Bake in preheated oven for 10 minutes, or until edges are light golden brown. As soon as cookies come out of oven, use the back of a spoon to push the edges of the cookies back into a circular shape (if needed). Allow to cool 5 minutes on cookie sheet then transfer to wire cooling rack.
