Buffalo Salmon Bites
These Buffalo Salmon Bites are crispy on the outside and tender and flaky on the inside. Coated in a delicious buffalo sauce and served with a homemade creamy ranch, these salmon bites make a great lunch or dinner. Made in the air fryer or the oven, these salmon bites take roughly 10 minutes to cook and can be served on top of rice, or eaten as is with your favorite side.
I love salmon, but don’t make it near as often as I’d like to. I love eating salmon as is, but I always enjoy creating new ways to enjoy salmon. This salmon bites recipe is one of my favorites. The salmon bites are crispy from the breadcrumb coating, yet tender and flaky on the inside. The buffalo sauce coated on these makes them so delicious!
Here’s what you need to know…
It is important to set up your breading stations before making these salmon bites. It makes the process of making these much smoother. You’ll want to add flour, salt and pepper to one bowl, the egg and buffalo sauce to a second bowl, and the breadcrumbs and seasonings in a third bowl.
Once the breading stations are set up, cut your salmon into bite size pieces. Next, you’ll dredge the salmon in the flour mixture, dip in the egg mixture (allowing the excess egg mixture to drip off), then coat in the breadcrumb mixture.
If you choose to make these in the air fryer, add to the air fryer basket and air fry for 8 minutes at 390F. If you choose to make these in the oven, you’ll want to preheat the oven to 400F, add the salmon bites to a parchment paper lined baking sheet (so they don’t stick), then bake for 10-12 minutes, or until golden and crispy.
Once these are baked, you’ll toss the in a delicious homemade buffalo sauce. Serve these with creamy, homemade ranch and your favorite sides, or on top of rice. Either way, I think you’ll enjoy these air fryer salmon bites!

Ingredients
- 2 salmon filets, cut into bite size pieces
- 1 tablespoon olive oil
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- Salt and pepper
- 1 teaspoon dried oregano
- 2 teaspoons paprika
- 1/2 cup plain panko breadcrumbs
- 1/4 cup all purpose flour
- 1 large egg, beaten
- 2 tablespoons buffalo sauce
Buffalo sauce
- 1/4 cup buffalo sauce
- 1 tablespoon honey
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/4 teaspoon ground cumin
- 1/4 teaspoon paprika
Creamy Ranch
- 1/2 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Juice of 1/2 lemon
- 2 tablespoons buttermilk
- 1 tablespoon fresh dill
- 1 tablespoon fresh parsley
- 1 tablespoon fresh chives
Instructions
1. Set up your breading station.
STATION 1: In a shallow bowl, add flour and season with salt and pepper. Stir to combine.
STATION 2: In a bowl, add egg and buffalo sauce. Whisk to combine.
STATION 3: In a shallow bowl, add breadcrumbs, oregano, paprika and season with salt and pepper. Stir to combine.
2. Dip the salmon pieces in flour, egg mixture (allowing excess to drip off), then breadcrumb mixture.
3. For the air fryer: add salmon pieces to basket of air fryer in a single layer. Spray with nonstick cooking spray. Air fry at 390F for 8 minutes.
For the oven: preheat oven to 400F. Add salmon bites to a parchment paper lined baking sheet. Spray salmon bites with nonstick cooking spray. Bake in oven for 12-14 minutes, or until golden and crispy.
4. Meanwhile, make the buffalo sauce. In a small bowl, whisk together all ingredients for buffalo sauce. Once the salmon bites are baked, add the salmon bites to a bowl. Pour buffalo sauce over salmon bites and toss or gently stir to combine.
5. Make the creamy ranch. In a medium size bowl, stir together all ingredients for creamy ranch. Serve salmon bites with creamy ranch and enjoy!
