Description

These Buffalo Chicken Stuffed Pitas are soft, fluffy and stuffed with a delicious homemade buffalo chicken mixture and homemade ranch. The tops of the pitas are brushed with a garlic butter for the finishing touch. These are a fun, handheld dinner that everyone will love! If you don’t want to make your own pitas, you can buy store bought pitas.


Ingredients

  • 1 packet (2 1/4 teaspoons or 1/4 ounce) instant yeast
  • 1 cup water (warmed to 110F)
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 3 tablespoons olive oil

Buffalo Chicken

  • 2 cups fully cooked, shredded chicken
  • 4 ounces cream cheese, softened
  • 1/3 cup buffalo sauce
  • 1/2 cup cheddar cheese, shredded

Homemade ranch

  • 1/3 cup sour cream or greek yogurt
  • 2 tablespoons buttermilk
  • 2 tablespoons mixed fresh herbs (parsley, dill, chives)
  • 1/4 teaspoon garlic powder
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Garlic Butter

  • 3 tablespoons salted butter, melted
  • 2 tablespoons parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 clove garlic, minced

Instructions

1. In the bowl of a stand mixer fitted with the dough hook attachment, add yeast, sugar, water, flour, salt and olive oil. Mix on low speed until the ingredients come together, then turn up to medium speed and knead for 5 minutes.

2. Transfer dough to lightly greased bowl. Spray the top of the dough with nonstick spray, then cover with a kitchen towel or plastic wrap and allow to rise for 30 minutes.

3. While the dough rises, make the buffalo chicken. In a bowl, add the ingredients for the buffalo chicken. Stir to combine. Cover and set in fridge until ready to use.

4. Make the ranch. In a bowl, add all ingredients for ranch. Stir to combine. Cover and set in fridge until ready to use.

5. Preheat oven to 500F.

6. Punch down dough and turn the dough out onto a floured surface. Divide into 8 pieces. Roll into an 8 inch wide circle, roughly ¼ inch thick. Spread ranch dressing in center of circle, then add buffalo chicken. Take the edges of dough and pull over top of chicken. Press the dough together in center to seal.

7. Turn the pita over, so sealed side is down. Gently flatten the pita with your hand, then place on parchment paper lined baking sheet. Brush the top of the pita with garlic butter. Bake for 8-12 minutes or until golden brown in color.
