Berry Pancakes
There is nothing that beats a stack of warm, fluffy pancakes. These Berry Pancakes are thick, fluffy and are bursting with fresh blueberries, strawberries and raspberries. Serve these pancakes with a delicious, homemade berry syrup that takes less than 10 minutes to make.

If you choose to, I recommend making the berry syrup first, that way your mixed berry pancakes won’t have to wait for you to make the syrup. The warm syrup will retain heat for some time.
The berry syrup is easy to make and comes together in under 10 minutes. Whisk together the corn starch and water, then add to your skillet along with remaining ingredients. Cook until the syrup begins to thicken, stirring occasionally, and the berries begin to release their juices. Once this happens, remove from the heat. Your berry syrup is now ready! You can set it aside until you are ready to use it.
Mix the pancake batter
In a large bowl, add the liquid ingredients (the maple syrup, milk, egg, vanilla extract, and melted butter). Whisk to combine. Add the dry ingredients and whisk to combine. It’s okay if the batter is lumpy. You don’t want to overmix the batter, or it could lead to dry and dense pancakes. Add the berries to the batter, and fold into the batter with a spatula or wooden spoon. Folding an ingredient into batter basically means you gently mix the batter to incorporate the ingredients together. You don’t want to mash the berries.
Cook the pancakes
I like to add butter to my skillet before cooking the pancakes. You can also use vegetable oil. Yes, I know the batter already has butter in it, but the butter or oil in the skillet helps the edges of the pancakes to get the golden, crispy edges. It truly makes them delicious, so don’t skip it, unless you need to :).
I use 1/3 cup to measure out the pancake batter into the skillet, then use a heat proof spatula to sort of tuck the pancake edges in and create a nice round shape pancake. You, of course don’t have to do this. Pancakes with not round edges taste just as good as the ones you see with perfectly round edges, right!?
Once the pancakes are done cooking, they’re ready to eat with the berry syrup, or maple syrup or even just butter and more fresh berries. These pancakes are light, fluffy, thick and ultra delicious with all of the fresh berries. I hope you enjoy these as much as my family did!

Ingredients
- 1/4 cup maple syrup
- 4 tablespoons unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups milk
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup raspberries
- 1/2 cup blueberries
- 1/2 cup strawberries, stem removed and chopped
- Mixed Berry Syrup
- 1/3 cup granulated sugar
- 1/2 cup water
- 1 tablespoon cornstarch
- 1/2 cup fresh blueberries
- 1/2 cup fresh strawberries, chopped
- 1/2 cup fresh raspberries
Instructions
1. In a large bowl, add maple syrup, butter, egg, vanilla extract and milk. Whisk to combine, then add flour, baking powder and salt. Whisk to combine. Fold in the fresh berries just until combined.
2. Heat a nonstick pan or griddle over medium-low heat. Add oil or butter to pan to lightly grease pan. Pour 1/3 cup batter into pan. Use a heat proof spatula or spoon to tuck the edges of the pancake in to help form a round shape.
3. When bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.
4. Make the Berry Syrup. In a large skillet, add all ingredients for the berry syrup. Heat over medium heat, until the berries release some of their juices and the mixture thickens. Remove from heat.
5. Pour warm syrup over warm pancakes and enjoy!
