Beef Ragu Pasta

This Beef Ragu Pasta is rich and full of flavor. The sauce only involves a few minutes of hands on time before it slowly cooks away on the stove or in your slow cooker to develop the most luscious, flavorful sauce. Serve the sauce with your favorite pasta for a meal the whole family will love. This sauce freezes well, too, so you can make it for your week ahead.
Ingredients
- 1 tablespoon olive oil
- 2 pounds chuck roast, cut into cubes
- 2 medium carrots, peeled and diced
- 2 medium stalks celery, diced
- 1 medium yellow onion, diced
- 6 cloves garlic, minced
- 3 tablespoons tomato paste
- 4 cups beef broth
- 2 cups water
- 1 29 ounce can tomato sauce
- 2 bay leaves
- 4 sprigs fresh thyme
- 3 sprigs fresh rosemary
- Salt and pepper to taste
- 1/2 cup fresh basil, chopped
- 1/2 cup parmesan cheese, grated
- 1 pound pasta of your choice (Rigatoni pictured)
Instructions
1. In a large pot, heat olive oil over medium-high heat.
2. Season beef all over with salt and pepper. Add beef and sear on all sides until a crisp browned crust forms. Remove the beef from the pot.
3. Reduce heat to medium. Add the carrots, celery, onion and garlic. Cook, stirring frequently.
4. Add the tomato paste, stir to combine and cook 1 minute.
5. Add in the beef broth, water, tomato sauce, bay leaves, thyme, rosemary and salt and pepper to taste.
6. Bring to a boil, then reduce to a simmer. Cover with a lid and cook for 30 minutes. Partially cover the pot with a lid for the remaining 1 ½ hours of cook time. You want the sauce to reduce and thicken.
7. Remove the beef from the sauce and place in a large bowl or on a large plate. Shred the beef with two forks OR place in your kitchenaid mixer bowl fitted with the paddle attachment, or handheld mixer and beat on low speed. This will shred the beef. I personally thought this method was easier and recommend using this method.
8. Add the shredded beef back into the sauce. Stir in the fresh basil and parmesan cheese. Add cooked pasta to the sauce. Stir to combine.
9. Serve with extra fresh basil and freshly grated parmesan cheese. Enjoy!
Notes
- Slow Cooker – You can make this in the slow cooker if you prefer. To do so, sear the beef in a large pot, then add the beef and remaining ingredients (except the fresh basil, parmesan cheese and pasta), to your slow cooker. Cook on high for 4 hours or low for 8 hours. When finished cooking, stir in the fresh basil, parmesan cheese and cooked pasta.
