If you’ve always wanted to make bread, but are intimidated by it, this is the bread recipe to start with. While the recipe is easy, it’s also packed with incredible flavor, thanks to the long rise time of the bread. It’s a great recipe for beginners due to the ease, as well as those who have mastered bread making, since it truly delivers on flavor.

Here’s what you need to know…

This artisan bread recipe practically makes itself. That’s because the bread rises for 24 hours. During this time, you don’t have to do a single thing to the bread. Just let it do its work. While waiting for 24 hours may seem like a long time, it’s actually, to me, better than waiting for 2-3 hours, then shaping and rolling, rising again, then finally baking. Those types of recipes usually consume half my day. With this recipe, you spend roughly 20 minutes, measuring and mixing the bread dough, then you let it sit for 24 hours. You can enjoy your day and not spend half the day waiting for the bread to rise. The next day, you shape the dough, allow it to rise 25 minutes, then bake for 35 minutes. The second day is a bit more time consuming, but still only takes an hour, compared to half a day.

Making the dough

This crusty bread uses active dry yeast, which means it needs activation time to get it started. Mix the yeast with warm water, then add to the flour and salt mixture. Mix the dough by hand just until ingredients are combined, then allow the dough to sit for 10 minutes. This 10 minute rest period allows for the gluten chains to begin forming and for the flour to become fully saturated.

Once the rest period is done, knead the dough for 7 minutes, cover and allow to rise 24 hours at room temperature. This rise is crucial as it gives the bread its amazing flavor.

Shaping the dough

This part of the process is flexible. I shaped my dough into a baguette, but you could also shape the dough into an oval or oblong oval shape. I recommend if you choose to shape into an oval or oblong oval shape to place the dough in a parchment paper lined baking pan that fits the shape of the dough. If you shape the dough into a baguette, you may simply place it on a parchment paper lined baking sheet.

When shaping the dough, you need to be very gentle. You don’t want to knock out the air that has formed in the bread from the yeast.

Second rise and baking

To achieve the most light and delicious artisan bread, a second rise is a must. The second rise takes 25 minutes. I recommend turning the oven on to 425F during this time. Once the rise is done and oven is preheated, bake bread for 35 minutes.

Serving

This bread is versatile. You can use it as sandwich bread, bread to dip in soups or stews, or bread served with a bread dipping oil. I shared a homemade bread dipping oil recipe to pair with this bread, and let me tell you. It is out of this world delicious.

Serve the bread warm and enjoy! You may store leftovers, covered, for up to 4 days at room temperature or 8 days in the refrigerator. Alternatively, you may place bread in freezer safe bag and freeze for up to 3 months.

Ingredients

Chewy Rustic Bread

  • 1 teaspoon active dry yeast
  • 1 cup water, warmed to 110F
  • 3 cups bread flour
  • 1 teaspoon salt

Bread Dipping Oil

  • 1 clove garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon dried parsley
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoond dried)
  • 1/2 tablespoon fresh thyme (or 1/2 teaspoon dried)
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Extra virgin olive oil

Instructions

1. In a small bowl, whisk together yeast and water. Allow yeast to sit in water for 10 minutes. This activates the yeast, so that it will make the bread rise.

2. In a large bowl, add the flour and salt, Stir to combine. Pour the water/yeast in the flour mixture. Use a wooden spoon or bowl scraper and mix just to combine ingredients. Allow to sit for 10 minutes, then knead for 7 minutes. The 10 minute rest period allows for flour to become fully saturated and the gluten chains to begin forming.

3. Cover the bowl with plastic wrap or a kitchen towel and allow to rest for 24 hours at room temperature.

4. Use a bowl scraper or spatula and gently scrape dough out of bowl onto floured piece of parchment paper.  Gently shape dough into a baguette shape. Transfer parchment paper to baking sheet. Alternatively, you may bake this in a baking dish. Shape the dough according to the shape of your dish, then transfer the parchment paper to the baking dish. Trim the parchment paper as needed to fit. Cover the dough with a kitchen towel or plastic wrap and allow to rise 25 minutes.

5. Preheat oven to 425F.

6. Bake bread for 35 minutes.

7. Make the bread dipping oil. In a small bowl, whisk together all ingredients for the bread dipping oil. Serve with bread and enjoy!
