Apple Cider Spice Cake

Yesterday was a special day, because it was my late dad’s birthday. He passed away 3 months ago from cancer. My dad’s favorite cake was spice cake. Ingredients
Cake
- 1/2 cup vegetable oil
- 1 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup Greek yogurt
- 1/3 cup apple cider
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground allspice
Cream Cheese Frosting
- 6 ounces cream cheese, softened
- 4 tablespoons unsalted butter, softened
- 1 teaspoon vanilla extract
- 3 1/2 cups powdered sugar
- 1 1/2 tablespoons heavy cream or whole milk
Apple Cider Caramel
- 2 cups apple cider
- 1/2 teaspoon ground cinnamon
- 1/2 cup granulated sugar
- 4 tablespoons unsalted butter
- 1/2 cup heavy cream
Instructions
1. Preheat oven to 350F. Line an 8×8 pan with parchment paper. Set aside.
2. In a large bowl, add oil, sugar, eggs, vanilla extract, apple cider, and Greek yogurt. Whisk to combine. In a separate bowl, sift together the remaining ingredients. Add in the sifted ingredients and whisk just until combined.
3. Pour batter into prepared pan. Bake in preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
4. Allow the cake to fully cool before frosting.
5. Meanwhile, make Apple Cider Caramel. In a large pan, add apple cider and ground cinnamon. Bring to a boil. Boil for 5-10 minutes until reduced and thickened, stirring frequently. Reduce heat to medium and stir in sugar. Stir until sugar dissolves, then allow to bubble for 30 seconds. Remove from heat. Slowly stir in heavy cream and butter. Pour caramel into a glass jar to store.
6. Once cake is cool, make frosting. In a large bowl, using a handheld mixer, or using a stand mixer, beat the cream cheese and butter until smooth and creamy. Add in vanilla extract, powdered sugar and heavy cream (or milk). Beat until light and fluffy.
7. Spread frosting over cake, then drizzle the caramel over top of the frosting. Swirl the caramel through the frosting. Serve and enjoy!
